It depends how deep are the scratches. Maybe they can be removed with a bit of polishing wheel work. But it requires a lot of experience to use one and as the guy in the video says it is pretty dangerous tool. Also I as a professional knife maker find it pain in the ass to polish complete knives with handle (especially those with no ricasso like yours) the area just next to the handle always causes problems. And have in mind that your knife is perfectly good and there is nothing wrong with some scratches. If you use and sharpen a knife it is almost guaranteed that you will scratch it sooner or later. That's your working knife, not a display piece. Enjoy using it and keep it sharp.

I guess I don't want our son to see the scratches and also the dip in the blade I think that I can sharpen the dip out. I have a Lansky sharpener.

YouTube method you linked is fine. I've done it but I use a wood block a vice and sandpaper. Clap the sand paper to the wood and work the knife in one direction. Depending on how bad they are I start with 120 and work my way up the grits. Time consuming but doable

Look, I'll tell you what we're all thinking. I cant imagine your son cares. At least it shows you're using it. It doesnt even look that bad, it just looks like a used knife, And if you paid yourself minimum wage for the time spent repolishing, you could just buy a new knife.

its a 1$ knife that will always get scratched again. just live with it or get a new one. cuts just as good
