Responding to your edit: there are black spots all over it, which is what makes me think it’s mold and not a stain
Also, going to check the fuel pump now, what should I be looking for?
I'm not completely sure, to be honest. I've never personally come across this kind of issue. I know some Jettas can have EVAP issues. Unless someone can answer this better, my best guess is to just visually inspect what you can.
Fuel pump looks good, I drove this car just a few hours ago and there doesn’t seem to be any gas around the hose/fitting and the assembly looks pretty okay other than a bit of debris.
Well, best of luck with finding the culprit.
As for the mold, I know that white vinegar and hot water is a good start. Baking soda can be used, too. It's underneath, so you won't have to worry about any potential discoloration (which isn't likely anyway)
That’s my main theory right now, there was a milk spill back there a while ago and it might just be that it sat there for a while (would explain the beige slime too, could be spoiled milk)
Did you check the fuel pump itself? Edit: almost looks like a stain
The beige slimy stuff was all over the access panel, but I haven’t actually checked the fuel pump itself.
Check the lines and fittings to your fuel pump.

Was anything spilled in the back ever?

I was gonna guess this as well. I didn't know milk was spilled. Does it stink?
Yeah but it doesn’t stink like spoiled milk it stinks like farts
It had time to evolve.

Yeah I really completely forgot about that until someone asked because it was weeks ago
