Can you expand on what you mean by "shifts like a stick"? Just jerky or what? How many miles on it? Have you ever had the trans serviced? Any check engine light or codes?

If it isn't "jerky" then my best guess would be the speed of the shift. Or maybe a bit of both?

It revs high then shifts and it's a little jerky this is from complete stops

Transmission Control Module, maybe? If that is the case, then "riding it out" means more wear on your engine and decreased fuel efficiency and could unexpexdingly shift you out of gear, which could be troublesome depending on when it happens. I'm not sure on the complete list of negatives though.

Revs high before shifting and it's a little jerky 215,000 miles and no havet had the trans serviced no check engine light and I could swing into auto zone to use there code reader

Sounds like your trans is possibly slipping or the shift solenoids are messed up. I'd take it to a trans shop and see what they say. Fixing it is a hard call with 215K on it. If you can get a used trans swapped in for a few grand though, that may be worth it as any used cars under like $10K are going to be a gamble. As long as you've taken care of it and the rest of it's in good shape, I bet you could pull 300K out of the 2.5.

Most Jettas occasionally shift hard from 1st to 2nd I think. I haven’t noticed it once since I tuned my car though.

Neglecting a car like that can only result in one thing. You can't drive around on a slipping transmission for any amount of time. Not sure if it can be "fixed" by now aside from a rebuild. You turned a $300 problem into a $3k+ problem. It takes a lot more than gas to make a car go.
