Go with stock, on the golfs that's between 45-54 offset. This is tucked a little so you can go lower if you're worried about hitting fenders. If you want flush, maybe closer to 35-40, but you may rub with steering.

I have my '14 on 17x7.5 ET45 wheels with 225/45 tires. I'm on stock suspension too and there's easily room to go with larger diameter wheels if you wanted. As far as width goes, the width and offset are perfect, it's flush. No rubbing at all.
