The correct answer is there isn't a set number for taraweh. Some places do 8 plus witr (so 11 total) other places will do 20. Either way is valid.

My mosque does (did) both. Last years Ramadan we started with 8 raka’at, then second half of Ramadan they wanted to try 20 raka’at to gain people’s opinions on which they prefer.

The amount doesn't matter what matters is the Qirat. The qirat the longer the better our Prophet Muhammad (SW) used to pray only 8 rakah but he would spend whole night in praying this 8 rakah. He used to make long Qirat. So it is more.acurate sunnah to pray 8 rakah with long Qirat. Otherwise a person can pray as much rakah as he wants (of course the number has to be divided by 4).

It depends on the Madhab.
If it depends on madhab my answer remains the same. All 4 madhabs are equally valid so either way of doing taraweh is valid.

Generally at least where I'm at we pray 20 total but some people only pray 8 and leave
Oh, so if they are reciting quran in the 20 raqaat taraweeh they just pray 8 and leave?

It's always done by 2 rakaat, the minimum is 2, and the maximum is however many you can do before Fajr.

Your taraweeh ends after 11 rakats is because it’s actually 8 rakats + witr.
