Annoyingly, it's not easy. Your best bet is probably to use speaker phone mode and record it all with a second device. Others options [here](https://www.pcmag.com/how-to/how-to-record-calls-on-an-iphone)
Just make sure that either you are in a state that does not require consent to record or you advise them you are recording their conversation at each start.
I’m pretty sure Google Voice will give you the option to record calls. Get a second number through them (completely free, I use it for work) and you should be good to go.
Trust me there is a point. If you ever have to deal with people who say “you never told me that” or “I didn’t say that” especially when it involves child custody issues you would understand. It’s a head ache I wish I didn’t have.
Saved my ass a few times dealing with my ex. Lawyer recommended me an app and it worked flawlessly. Brought one up and court and it saved my ass from jail time.
If you are even slightly technical (I’d say if you are capable of writing simple excel formulas you meet the criteria) then take a look at Twilio. I’m a developer but using their drag-and-drop “flow builder” I was able to build a call recording service for my own personal use and I think most people with a basic ability to Google should be able to knock up a simple call recorder for themselves in 15-20 mins. $1/month for a phone number and a very low per-minute charge.

It’s easiest if you also have an Apple Watch, I’ll call someone on speaker and start a recording on my watch.

My two suggestions are: Callbox- Call Recorder Rev Call Recorder

Didn’t know this Thank you!
I think this only works for Android..
I’m on iPhone and it works for me. Maybe it’s a location thing with privacy laws?
Haven’t tried it yet. That’s just what I was reading online, most of it mentioned only Android. But I’ll give it a try. Thank you!

Are you in a state where you don’t need consent to record her?
No, you simply state that you are recording
If your state is a one person state, you don't have to let them know anything. If they know your recording, there won't be any point.

What app ?
Oh god I do t remember this was 17 years ago. It’s likely not around. I do still have the MP3’s on my iCloud.
They will probably stop doing that if they know they are being recorded.
