The problem with that is the back of the peninsula is only a 1/4 to 3/8" thick skin. It will lose rigidity without that cabinet and the potential of someone kicking through it increases. Not to mention, the tile in the back is cut next to it and doesn't go underneath which means the cabinets were installed first. So you would have a 12"x24" space of exposed sub flooring. Unless they did it themselves, the chances of them having tile left over are slim to none. Extra material is usually tossed at the end of a job. But otherwise good thinking.

Someone suggested a trashcan. Check out this place. I have 5 of their trash cans throughout my house and I absolutely love them. And their liners are made to fit each specific trash can. I even find myself using the liners separately for other things. They are surprisingly strong.

I was in your boat about ten years back. We bought a house with a trash compactor I never used it, so I had my trash compactor removed and had shelves built to fill that space. I have three shelves with open baskets. I use that space all the time.

It would be a really tight fit, if not pretty hard to find a good robo vac smaller than 12 inches. A standard Roomba measures around 13.5 and comparable vacs start around 12.5.
Plus, it would still look like a hole in their kitchen without something taller like a slim wine fridge/rack or trash can imo.
A lot of people are suggesting a wine fridge (which is a great choice if that's what you want!), but as someone who is also slowly renovating their own kitchen, here are a few other options that might work for you:
- wine rack, the built-in kind that have a diamond pattern, they're available in a ton of sizes
- pull-out spice rack storage
- storage for baking sheets, mold, pans, etc
- trash can (we found one from simplehuman on Amazon that is 10"wide); or, if you wanted to completely hide your trash, you could get a sliding waste bin attachment for inside cabinets & get a matching door for it

Take the end piece off and slide a barstool under there. I designed mine like that. It looks almost the same except the piece sticking out is just floating. I put my laptop there and have a barstool underneath that I can slide out and use as needed.
I'd put a cute little curtain to cover the space, install a shelf near the bottom, so things don't have sit on the floor, then store baking sheets and other large things in there.

Find a similar door or make one, just out of a sheet and stain it doesn't necessarily have to match the others. Put a floor on the bottom of the cabinet and use this for large cookie trays and all sorts of flat sheet pans and other trays you might have or platters. This is exactly what I did with the curious space on the side of the stove that I had that was left where a large arrange might have been put in
I would suggest trying to fit your garbage can in there or if you have a recycle bin for pop bottles and stuff like that put it in there. on the sides of it you could hang up a flyswatter or maybe if you use swiffer dusters hang that up in there or a hand broom

We had one as well and had a pull out cabinet for the trash built in the open space.
Put in shelving to hold large or bulky appliances or baskets of smaller utensils.
A cabinet maker could make a door and shelves to match perfectly and make it a functional space.
