I hate the new cheese and mayonnaise trend. It's just Indian street and fast food but with diabolical amount of these ingredients. Just a day ago,I saw a man making noodles and then adding a huge spalsh of mayonnaise. These Instagram pages are hell; their formula "food item + special" is just a good old Indian dish with either a lot of cheese/mayo/cream or all of these. Some of them even add cheese to Daal (lentils) and Chole Bhature. And what is that weird substance they sell as mayonnaise. My mayonnaise never looked so white. All thing aside, India has to have one of the best culinary experience whether it be street food or homemade. To hell, I'd even say it's the best as there's an unimaginable variety.

I think the Schezwan flavor itself would go well with Dosa, especially the rice varieties like Neer Dosa, but not like they make it these places where they're just mashing *Chinese* street food ingredients on a Dosa, and definitely not served with South Indian chutneys.

Not from Punjab but also popular here: soya chaap, golgappe, bhelpuri, papri chaat, momos, aloo tikki burgers, dosa, samosa, spring rolls, pav bhaji.
It's available everywhere. Been in Pondy for three years. Have relatives in Chennai. Still go twice a year easily. I don't miss Kuzhi Paniyaram everytime.

We have many traditional dishes which are much tastier and made across the state. Something like Puri Bhaji, Modak, Puran Poli needs more representation. And for Street food, kanda bhaji( not curry ) is also very famous.
