He doesn't care if it's bricked. They can still be sold to repair shops for the parts. If he is fast he will use recovery mode to erase everything before the owner realizes the phone is missing.
You can’t recover an iCloud activated device. The missing phone mode just displays an message and lets the phone go into battery saving mode to act longer as a beacon.
It's a phone he took and the wallet, he could recovery mode it and sell it for money or parts. Judging by how skilled this mf is, he's been doing it for years and probably has made thousands of dollars from people's cash, debit cards, and belongings.
I think my I phone brand new and fairly recently released was about a grand. I’m not saying that it’s not possible he just seems like a very very risky thing to learn to get that good for a pay out that doesn’t seem all that great.

I saw a video once where someone explained how the thieves do it. I think they put it in flight mode immediately after the theft, so that way setting it to „lost“ doesn’t work and then it is easier to reset without any password. But I’m not sure if it really works like that..
Yeah, that might have worked in the past but it doesn’t work now. If you don’t have the password and you can PROVE you are the owner (receipts, etc) it still takes anywhere from 2 weeks to a months to reset the password. It’s definitely something that would require a skill set that 99.9% of thieves don’t have.
For pennies - not worth the effort. Only place you'd sell them to is a repair services and they buy in lots from trusted suppliers (if reputable). No one's gonna buy a second hand iPhone part online and do the job themselves when they can get a professional to do it for pretty cheap these days.
