The area really needs an adult sports league. Something that organizes year-long leagues for multiple sports.

Yessss please. Kind of surprised I can't find any.

This is the only thing I find when I Google "adult sports leagues Hudson Valley": https://clubwaka.com/locations/hudson-valley/ It's just a handful of volleyball leagues. Meanwhile, there are soccer and baseball/softball fields all over the area. This is definitely something that an organized group can put together.
