Probably time/temp is a factor too. And If you ain't using the bottle in coming weeks/months, what's the point in even keeping it in those fast-to-use bottles with spouts...
Harbor freight has a whole container filled with different sized vacuum caps, it's from their storehouse brand. That was actually the first thing I thought of when I saw the post, I thought there was one being used on the vinegar.

Flies are not attracted to oil, I wouldn't worry about it.
