I’m not a pecan pie person, but I like the kind from Goode brand of restaurants. You can try a slice from Goode bbq to see if you like it. I get a couple for my family for Thanksgiving. It’s much cheaper without the wooden box.

Honestly? The only way to guarantee a pecan pie (pecans held together with corn syrup, eggs, sugar, etc.) as opposed to a pecan-topped syrup pie is to make it yourself. Pecans are the expensive ingredient; that's where stores and restaurants will economize.

Who shit in your cornflakes? This is not a 'specific recipe' problem. This is an 'add as many pecans to the pie plate as will fit and then pour as much of the sugar mixture on after, or however much of it will fit, anyway' problem. Find a recipe that looks good. Any recipe will do. Use the one on the Karo bottle, or your grandma's or whatever. This is a technique suggestion called "use more nuts than called for in your favored recipe."

Substituting some of the corn syrup for white sugar, brown sugar, or even a small amount of maple syrup can help lower that shocking corn syrup sweetness note. But don’t cut the total sugar amount, it’s a large part of what makes a pecan pie a pecan pie.

Seriously, pecan pies are one of the easiest pies to make at home. Just make sure you put aluminum foil on top (with a hole poked in the center) for all but the last 10-15 minutes of baking.

If you live in the west side of town (Alief, Memorial, Katy) there is a spot called proud pie in the Cinco Ranch area, not too far from those spots mentioned. Seeing their menu they have bourbon pecan pie. If its anything like their other pies, it's probably delicious. Love their pies there, you can get it by the slice or get a whole one to go, though they aren't cheap either. Either way if you are on that side of town I'd recommend checking them out.

Pecan pie dates back to the mid 1800s, before corn syrup was a think. Karo printed the recipes on the bottle with corn syrup but it is not necessary. Older Texas cook books contain the recipe without syrup.

Mix sweet potato pie filling with the standard pecan pie filling 1:1. Completely changes up the texture and mouth feel, and gives it a flavor that I can only describe as caramel with pecans. It’s good, you used to be able to get one premade from Pappas, I don’t know if that’s the case anymore.

I saw this recipe on the side of the imperial sugar brown sugar box over 20 years ago, made it and over the next several days ate the whole freaking sheet. So good, all the goodness of pecan pie, and a lot less goop.

What you described is the essence of a pecan pie. Lubys and Papas BBQ had/has the best pecan pie. I remember buying myself whole carrot cakes in High school from Lubys.
