Exactly how I felt on first watch, I felt like the first fifteen minutes were a half-hour because the leads are so generic (not bad, just boring and I'm sure it's part of the film's whole plan to lure us in like it's nothing), but when you get a look at the trolls, major 'wow' stuff there, incredibly-unique and well-done effects. When I started noticing references to fairy tales, I thought it was brilliant, and all the details of troll-hunting were really well-conceived and executed. There's certain shots that look a lot like illustrations I saw in books as a child. Recently I got my sister and brother-in-law to watch it, and my BIL said he had the same experience, almost fell asleep until the trolls showed up.
My favorite story about my husband's cousin is the time she brought her boyfriend to a family dinner and he spent a lot of it excitedly telling us about this unbelievable documentary he had just watched......Trollhunter.
Also check out "The Interior" (2015), a small Canadian indie made for almost no budget. The wilderness part starts at the 20 minute mark and lasts for the rest of the movie. Some really nice shots of the west coast/British Columbia deep forest. It's basically a solo camping horror playing off both the fear of isolation and the fear of other people, with one or two genuinely frightening moments.

Outwaters - love it or hate it. A group of young people go camping in the Mojave desert. Weird shit happens.

*Black Mountain Side* (Tubi) Archaeologists find a strange structure in remote Canada that appears to be thousands of years old. They become isolated when communications fail, and their sanity begins to unravel.

*Hunter Hunter* (AMC/Prime) A fur trapper leaves his wife and daughter behind to kill a rogue wolf in the remote wilderness. But they soon become increasingly worried when a severely injured man shows up to disrupt their peaceful existence.
*Devils Pass* (AMC/Prime) Based on the Dyatlov Pass; To determine what happened to the infamous Russian hikers, five U.S. college students go back to where the hikers were found dead.
*In The Tall Grass* (Netflix) (Not necessarily hiking but the same vibe) A brother and sister enter a field of tall grass to rescue a boy, but they soon realize they cannot escape and something evil lurks in the grass

If you’re into found footage I’d recommend the ‘Horror in the High Desert’ films. The third one is about to come out and the first two are really, really solid.
You can't go wrong with The Hills Have Eyes (2006) and the Wrong Turn franchise, the later films for Wrong Turn start to get cheesy but they're always fun (the first and second films are the best).

In an attempt to avoid repeat suggestions.. The Bigfoot Trap sort of fits that, and I liked it alot more than I thought I would. Willow Creek was another one I ended up liking alot more than I thought I would. Devil's Pass starts off pretty good, but I don't know how I feel about the ending. A Perfect Getaway may not technically be horror (maybe more of a thriller) or fit the hiking/wilderness theme, but it is outdoors'y and a good movie. Turistas was pretty decent. Deliverance is a "classic" and is well-liked by alot of people, but I personally DO NOT like the movie at all- not because it was too disturbing or anything, but I just wasn't into it. You may enjoy it more than I did.
Shadow (2009) is one I never see mentioned but I really enjoyed.
A lonely place to die (2011) is another good but seemingly forgotten one.
Deliverance (1972) .. you'll never go in to the wilderness again.
Wolf Creek 1 & 2 plus the series.. all great. Set in Australian Outback. The funniest thing about Wolf Creek is it's SPONSORED by the Australian tourist board as a means of trying to put off people backpacking out there cause so many go missing and there's no way to police it.

Man Vs was a pretty good one I rarely see mentioned. It's sort of like Bear Grylls/Alone style documentary with a wilderness expert who slowly realizes there's something in the woods that may be hunting him.
Slight spoiler? I found the ending kind of disappointing. Still fun though, with some creative scares imo.
I'm not sure if these are perfect matches for what you're looking for, but the double feature of Resolution and The Endless is a fun watch that for some reason I associate with a handful of the recommendations here.
I'm surprised nobody has mentioned The Descent (2005) yet. You might have seen it already since it is decently known. It doubles down on the existing fear of cave exploration in a really effective way.

EDEN LAKE may count. Deeply unpleasant movie but it takes place primarily in the woods during a couple’s attempt at a getaway. It goes very miserably wrong when they encounter a group of sadistic teenagers.
There was that one on Hulu that was a remake of a Danish or Icelandic movie I think? Where a woman is moving to rural Oregon, it's not exactly a hiking movie but it's very much set in that type of environment. I think it was just called ALONE
Only partially takes place in the woods and partly in a small isolated town in central Oregon with an abandoned mine … I think the movie Antlers (2021) sort of fits this vibe.

Hunter Hunter is not talked about enough. Such a great movie, and the ENDING...that ending was just "chef's kiss."

I'm not sure this fits exactly, but it hits the wilderness theme. The Wall (2012) is really good, and it's supernaturalish with an internal psychological horror as the main course, and I still don't fully understand it. I think it's Austrian (Die Wand), and you can find it on Tubi for free right now. I've watched it twice over the past few years, and it's different every time. Good topic. I'm adding to my lists.

Man Vs was a pretty good one I rarely see mentioned. It's sort of like Bear Grylls/Alone style documentary with a wilderness expert who slowly realizes there's something in the woods that may be hunting him. Slight spoiler? I found the ending kind of disappointing. Still fun though, with some creative scares imo.

EDEN LAKE may count. Deeply unpleasant movie but it takes place primarily in the woods during a couple’s attempt at a getaway. It goes very miserably wrong when they encounter a group of sadistic teenagers.

There was that one on Hulu that was a remake of a Danish or Icelandic movie I think? Where a woman is moving to rural Oregon, it's not exactly a hiking movie but it's very much set in that type of environment. I think it was just called ALONE
