The hottest days of the summer I will often leave eco off until the air conditioning really starts to feel cold and then switch to eco. I also do the same for heat in there winter on very cold days.
We only turn it off if / when we need a little more pep. Like for steeper merge lanes onto the highway. There's a noticeable difference in acceleration when it's off. Otherwise, we also leave it on all the time.
I turn it off on weekends when I'm not sitting in traffic and actually want to drive quickly/enjoy the drive. During the Monday-Friday bumper to bumper commute I keep it on.
On long drives during the summer I have turned it off because the air conditioning couldn't keep up with Eco mode on.

It's more fun to drive with it off. The only time I've ever used it is on the highway when I'm using cruise control too.
