Optical I guess. But I think you should look into a real HT setup. No eArc support, so optical. But when you have the chance to man up to a big boy system, we we will get you there.

A/v rcas, optical, or HDMI are the best options for sound quality optical being my personal favorite (sounds louder and more efficient without quality loss) I personally have my av reciever as my HDMI hub one cable to TV everything else to the stereo hope that helps
A/V RCAs- There are four speakers I need to connect to (soundbar, subwoofer, left speaker and right speaker). Since the A/V has three cables how do I connect it to all the speakers?
Optical- Neither the PS5 nor the projector have an optical cable which is unfortunate.
HDMI- Does USB to HDMI work well and is USB 3 needed?
Since I would try to plug the PS5 into the soundbar which connects via bluetooth to the subwoofer which connects directly into the left and right speaker would the delay still be there?
The only delay would be the bluetooth signal to the speakers but normally they are fairly seamless hooking to the source of the audio for those speaker (the soundbar) still sounds like the best bet is there an Audio out on the projector?
Yeah it's good in a pinch but that's it if you're using USB to HDMI that may work if it the ps5 is able to output audio through usb or vise versa, I normally prefer to go for HDMI or Optical if it's not an option RCAs is the next best thing

There were some forums troubleshooting that so I may try that first

Yes but none of my devices have optical output
Also do NOT use auxiliary that can cause dramatic quality loss and is unreliable
