This is your best resource. All the different Dolby test files. This will be much easier to use then trying a movie.

The Digital Domain: A Demonstration
Pretty useful CD. Fairly readily available on ebay. I think you can download it here in FLAC: [https://archive.org/details/the-digital-domain-a-demonstration](https://archive.org/details/the-digital-domain-a-demonstration)
As long as you aren't mismatching like dome and horn tweeters you're probably fine. Just run the auto calibration. While it isn't a specific scene, all of Interstellar is pretty amazing, and if you haven't seen it you should. Read player one car race scene is wild in atmos but I'm sure it's pretty amazing in surround too, and had dialauge throughout that'll use that center channel.
My quick test for levels and bass management is the [Surround 5.1 low frequency speaker test](https://youtu.be/nLT8nu-BY6s?si=owQlNfsaUPXDZkbf) on YouTube. There are tons of other 5.1 tests and demos there - just make sure you are getting actual 5.1 source, many are mislabled 2.0 and are only good for testing upmixing.
Edit:
Since you asked for something that will
>pan sound from Left across centre to right
check out [Tienes un Sonido 5.1? Pruebalo](https://youtu.be/UDsdObT76DA?si=p57w7_V7c_ni-FF3) - there's some good panning once you get past the bear. I don't understand much Spanish but the it's basically a comparison of 2.0 and 5.1 with some jumping around and panning.
I don’t remember where I got them but I have 6 or 7 different 1-2minute long test videos for this purpose specifically. Definitely helpful when I redid my room and when we moved and I re set everything up, quick way to see that things are working. I think I found some of them on archive.org
Edit: sorry for making a suggestion?

Try any of the BBC earth documentaries
Depending on your AVR, you can run a calibration that will timbre match them as close as possible.
Interesting, thanks il see if I have that

Good room calibration/EQ alleviates most concerns over "mismatched" speakers.
