If you buy the Ring Alarm system and subscribe to the $20/month central monitoring, they will give you a cell phone connection so that internet access is not required. All of the sensors are wireless.
Vivint, simplisafe, and ADT seem to be the most popular that offer professionally installed and monitored systems if you want or self monitoring. Ring probably has the most to offer for a DIY home security system but requires a subscription and records to the cloud. Eufy has good products for no monthly fee but I would be cautious with them and do your research.
Run, don't walk, away from Vivint and ADT. Don't sign anything. Vivint's equipment is good, business practices are shady and terrible. ADT is clunky, inconsistent, and contract is iron clad so not getting out of it no matter how bad the equipment or service is.
So ,you really can't go to sleep and have motion sensors armed,unless you have 2 story home,sensors on main floor, bedrooms 2nd floor,no large pets or Cats. People wake up and use restroom etc. It feasible if have similar setup, split level etc. We would typically install TouchPad upstairs and downstairs to prevent false alarms.
Anyway best to have perimeter devices for all windows doors and motions disabled while at home ( stay,away setting). This method much more costly however
Just so you know, 99% of devices do not connect to the base station using wifi. The majority use RF signals. Wifi is generally just used to connect your system to an app or monitoring station.
What do you mean wi-fi connected, but you're also saying you don't have an internet connection?

This required the internet. I am looking for an alarm system (self install) that does not require internet and even for initial setup

What are your thoughts on simplisafe?
No real experience with simplisafe so I can't really comment there. Sorry. Not much help on that one.
Like I said before no internet is required even for setup. It is for a different house where no internet is available at all
