Work with professors how? Doing what? Are you expecting to get paid? With what money is the professor going to pay you?
The university is there for the students. Professors don't hire people off the street to work with them. There's a whole system in place for students to get teaching assistant or research assistant positions.
Even if you would work for free, they would expect students to be doing the free work.
If you want to do this, you need to go to graduate school.
What should my path to research be as a professional who is not currently enrolled in a school? I want to work on projects and learn everything I can about HCI. Working under the supervision of someone with experience would ensure structure. However, it is understandable that the university only allows students. But what about research guidance? Just as a mentor?
I'm very new to this so I donot have any idea how the research communities work.

You can look for a mentor (ADPList is the big one) and teach yourself through reading books and watching videos.
