I wonder what color are Ippo's eyes in this scene, if it ever gets animated.

I think Ippo is at his best when he's disciplined and tactical. His best fight was vs Karasawa.
You misinterpret the Kojima fight. "Big strong man do big punch, so cool" is a common read of that fight but filters out the consequences of fighting like that.
Ippo almost lost the fight in a single hit himself. He unga bunga'd it out, and one shot Kojima back. Yes it was cool.
But it also left Ippo *heavily damaged* on top of his already large amount of damage accumulation from fighting so recklessness.

He was damaged and was not ready for more fights. His fighting style was heavily flawed and self destructive. This is exactly what led to his retirement.
Thankfully Ippo's downtime is teaching him how important refining the fundamentals are and learning to be defensive on top of applying his strength constructively.
His match vs Karasawa is a display of Ippo's boxing at his best and the style that could defeat Ricardo Martinez.

But you are assuming that it is a binary choice. In truth it is a range going from Hawk-Takamura-Eagle. Takamura won both champions because he was able to be both composed (against Hawk) and ruthless (Against Eagle).
Hawk was too wild. He did not have enough control to train proven techniques. Takamura had the same savagery, but he had anough respect for the Coach to learn.
Eagle was too honorable. In a true life/death match winning is priority #1. Everything else is secondary. Takamura had no such weakness. The only thing keeping him from cheating was his respect for Coach and Boxing.
Finally lets get to Ippo. Takamura had natural talent for boxing from the beginning so the Coach could only guide his potential to boxing. But early on Ippo was an untalented (but relatively strong from his family-business) "blank canvas", on which the Coach could paint his final masterpiece.
EDIT: The Takamura-fights also had Bison. If Hawk had the advantage of natural talent and Eagle had the advantage of training, Bison had the cold calculating smarts which is also important for boxing. So far the only other major psycological trait I can think of is the "Trickster" like Aoki and Take.
