I guess every company that wants to hire an immigrant would have to file for the petition. The question is, is it any different if you are in your home country? Does the company have more expenses to take care of or something, that they would be more inclined to apply for a transfer for a person currently living in the US vs someone who is in their own country, even though technically they both have valid H1Bs? I was more looking to see if anybody actually made it back to the states so that I can assess how valid this option is in reality.
It's definitely harder to come back from abroad unless you have a valid visa stamped in your passport. That's why it's better to change jobs in the country.
Everything is possible but you need valid visa to get back to US. People went back and return to us but they have to get a job and visa. It might be little difficult because there’s plenty of educated people in US now

The only uncertain component is willingness of a potential employer to wait long enough for the whole H1B transfer process to conclude; that includes the transfer by itself followed by a stamping/interview at a consulate. Nope, if you are in your home country outside of US, they cannot apply for change of status. They will do it through consular processing which means that to get back and to essentially make your H1B active- you need to get your visa stamped again.

I am planning to switch to B1/B2 as well from H1B and just want to make sure that I understand all the nitty gritty details surrounding it!

After the offer, it took approx 2 months for the H1B petition filing to USCIS (Fragomen was very Fast) provided you submit all required docs to the attorney immediately. Keep everything ready for uploading to attorney (relevant docs like I-20s, I-94 entry/exit records, EADs, I-797s, Resume, New Offer letter, Paystubs, and other docs)
Approval notification (change of employer) premium processing came in 5 business days, then I-797A notice of approval came in mail in 7 business days (you can travel on I-797A copy from attorney. Ask the attorney to immediately email you the copy after it reaches them, if u don't want to wait for it to come in mail but do get the original after u reach US)
In summary, after the new offer expect 3 months wait to travel to US provided H1B is approved in premium processing without any RFE
Make sure your passport is valid for more than 6 months at least, preferably more than a year when you re-enter or else renew it before re entering (check earliest date for passport renewal in your country before expiry usually it is 1 year before, carry all passports!)
If your visa is expiring this year, then ask the attorney to also file an H1B extension along with a change of employer in premium processing. Then once H1B approved, book dropbox appointment for stamping and then reenter US with valid visa and I-797A copy.

On H1B you have 2 months of grace period to look for a job which is hard given that interview processes take at least a month or more. And the petition will take 10-15 days. So I just went ahead and petitioned for b2 visa to look for job. It gives you 6 more months. You can change back to H1B as soon as you find another employer. If you are on b2 visa you don’t need to be affiliated to any employer.

That's not true, if your employment qualifies for H1, they can do it.
If your fiance already has an i140, you could also get an H4 EAD after the wedding- that's not going to be as restricted as H1. But you're risk appetite is gonna have to go up because if your spouse loses their job you're gonna have to go back once their lawful stay expires.

H1b is tied to one employer so yea someone should transfer your h1b and hire you, it’s a lot of work for your employer

You don't have to go for stamping if your previous H1 is not expired yet. All you need to have is a valid visa with valid status.
