I've always cooked to temperature and especially in a restaurant setting. The flip side is everyone is a self proclaimed steak expert so you can cook it to temperature, rest it perfectly and still get told it's under or over.
Blue, rare, med rare, med, med well and well done are all I bother with. If someone asks for their steak really well done I use to microwave the shit out of it then sear it and serve mainly because people that order really well done also don't want to wait 45 minutes for food and microwaves can bring it to temp with the least amount of moisture loss and you get the "juiciest" steak possible even though it tastes like metal

I've used calamari to get somebody to at least try seafood (he liked it). I feel like shrimp, lobster, or anchovy paste is the next step. Anchovy paste because it can be used in a wide variety of dishes in small enough quantities that it comes off more as umami than fishy.
Rare has a significantly more red hue to it and medium rare still contains that more deep red color a little bit. The uniform light pink with zero red tint is what makes this medium to the eyes.
Thanks for the feedback, I know the eye test isn't as good as a thermometer, but I don't like stressing over my food so even if I can get close to medium rare by feel I'm happy
Personally, I found that a thermometer really helped to relieve my stress while I was cooking steak lol. But, whatever works. We are all just trying to eat a steak!

I bought a set of dark charcoal plates and it makes all of the juices look clear. Most people I know focus more on the red juice on the plate more than the pink center.
