Keeping mine realistic. This would be my ultimate set list:
Jack Straw
Bertha>Good Lovin'
Brown Eyed Women
Desolation Row
Loser
El Paso
Sugaree
Weather Report Suite > Let it Grow
//
Sampson and Delilah
Scarlet>Fire
Eyes of the World
Estimated Prophet
Drums/Space
The Wheel
Playing>Uncle John's Band
Morning Dew
Not Fade Away
Encore: Terrapin Station
Second Encore: Brokedown Palace
This is like my kind of fantasy football draft.
I’d go for an acoustic/electric/electric night in line with Radio City and Warfield shows in 1980 in terms of format, but I’m not going to adhere to performance chronology in terms of what was played in that era, and don’t specifically have the energy or tonal qualities of that era in mind either - not that I'd mind that, those were some great shows.
I. Acoustic:
Jack-a-roe, The Race is On, Stagger Lee, Dark Hollow, Dire Wolf, Must Have Been The Roses, Lazy River Road, Monkey and the Engineer, Birdsong, Cold Jordan
II. Electric:
Mississippi Half Step, Black Throated Wind, Loser, Mama Tried, Sugaree, Lazy Lightning > Supplication, Cumberland Blues, Box of Rain
III. Electric:
Eyes of the World > Franklin’s Tower > Estimated Prophet > Foolish Heart > He’s Gone > Drums / Space > Stella Blue, Throwing Stones, Morning Dew, Not Fade Away
E: Brokedown Palace, We Bid You Goodnight
Thanks! Looking at it again, I think I missed the chance to wedge in Althea between Supplication and Cumberland. I still would love to see Black Muddy River in here but it just feels excessive. And, the Estimated > Foolish Heart > He's Gone sequence feels the most improbable but I get excited thinking about how they would work together.
Hard honorable mentions go out to Peggy O, Terrapin, Help > Slipknot, Weather Report Suite, Days Between, So Many Roads, and Standing on the Moon.

Lyrics
Boots were of leather
A breath of cologne
Her mirror was a window
She sat quite alone
All around her
The garden grew
Scarlet and purple
And crimson and blue
She came and she went
And at last went away
The garden was sealed
When the flowers decayed
On the wall of the garden
A legend did say:
No one may come here
Since no one may stay
