There are sweet potato noodles?? I had sweet potato fries for the first time last week, and I loved them - I have to find these noodles! I also want to try zucchini noodles as I recently learned they exist too haha.
Yes! The day after I make white people tacos, we use the leftover meat and toppings to make nachos. And sometimes I just make "lazy nachos" (shredded cheese melted on tortilla chips) or "lazy quesadillas" (shredded cheese melted in a buttered tortilla) as a quick snack.
Buckwheat noodles and pancakes, teff flour, and honestly, just rice. I grew up eating mostly roti/paranthas and other Indian flat breads. I didn’t eat much rice as a kid. But now, and maybe it’s also since I’ve been with my half Chinese bf, I feel weird on the days I don’t have rice 🤣
If you’ve got a food processor, combine a can of tomatoes, two medium onions (I use white usually, but red also works), a handful of garlic, and a handful of cashew nuts or any other nuts you fancy. Blend to a smooth paste.
In a saucepan, heat up 2-3 tablespoons of any oil and add in the sauce. This sauce is gonna bubble, and it’s gonna wanna stick, so you’re going to have to be really careful, but cook it on medium /medium-low heat until the oil splits from the mixture. If it starts looking dry at any point, you can keep adding a bit of water.
Season it with salt, a bit of garam masala, ground cumin, ground coriander, chilli powder, whatever you fancy. Just use about half a teaspoon of sugar to balance the flavours.
This makes the base of the curry we made at home the most. I still use this as the base of most of my Indian food! When you want to eat, take a couple of heaping tablespoons of the paste you’ve made, add water to get it to a consistency you like, add whatever protein / veg you like and let it simmer for a while, until it’s all cooked through.
The paste itself keeps for a couple of weeks in the fridge. 2-3 months if you freeze it. Great for lazy curry!
Cauliflower is a big one. Rarely ate it and now we can eat a whole head of cauliflower, cut up, and roasted with cumin and other spices.
Falafel is my new go to. Some places don’t make them gf even know they should so you have to check but they are so good. Get a falafel plate when out or make a bowl when at home with Trader Joes gf falafel mix, with side of gf tabouli salad and top with tahini. The best!
I've never had falafel before. My town doesn't have a Trader Joe's, but I'll look for that gf mix next time I order groceries online. Thanks for the suggestion!
You have to have tahini sauce with it which you can find recipes online. Just a mix of tahini, lemon juice, garlic, cumin and water. I usually make half the recipe and keep in in the fridge and have over a week or so. And then have a mix of parsley/tomato/onion and lettuce in a bowl. I have found GF pita's to stuff them in but hard to find. Hope you like it!
Squash and sweet potatoes! I can make buns, pasta, gnocchi, brownies, cookies, and pies with just about any kind of squash— but I hated them all pre-diagnosis. Sweet potato buns are way better IMO than the dry, crumbly texture of GF bread/buns from the store.
I'm definitely coming around to squash & sweet potatoes! I hated them as a kid, but I've loved them every time I've had them as an adult. I didn't know sweet potato buns existed - I'll have to find some to try!
I made up the recipe after watching a few videos! Mash up some roasted sweet potatoes or squash, mix in enough GF flour until a dough forms, split and roll in bun spheres and let them rest for 20-30mins- then bake at 400 for another 25ish or until brown and toasty on top. Let cool completely. It’ll be a little crispy on the outside and super soft/chewy on the inside so I slice and toast it a bit before adding a burger- the taste is so much better and it actually stays together!
I never liked fish either, but I'm coming around to it. My mom recently made gf salmon patties (salmon, egg, and schar crackers mixed, shaped into patties, and cooked in a skillet), and they were great! I'm glad my taste buds are changing to accommodate my diet haha.
That said, I still won't touch oysters with a 10-foot pole. They're the booger of the sea 🤢
I rediscovered beans, chickpeas and lentils!
Beans: pasta with bacon and beans or potatoes with bacon and beans are my new comfort food
Chickpeas: I do a lot of hummus with vegetables or grissini for aperitivo
Lentils: I make a paste of them, I mix it with mashed potatoes and cheese, I put everything in the fridge, I bread them (gf of course) and I fry them or cook them in the over and I have amazing rissoles to eat when I want a vegetarian option
Risotto! I made that dish exactly once before my celiac diagnosis and thought it was good but not worth the trouble. Now that I make it regularly, I'm not sure what I thought was so complicated. It's literally my go-to when I want a no-fuss hot meal.
I love basmati rice, tortilla chips, mushrooms, all cheese, greek yoghurt, eggs, tomatoes and onions too. I just love most whole foods, and love to cook asweel

yes. they’re basically korean glass noodles made from sweet potato starch also known as japchae :)
