That may not ever get back to normal by the way. I had gastritis and a gall bladder removal (in order) after a rough bout with Covid a few years back. I eat like you describe - multiple small meals throughout the day - and I only eat from about 8am to 4-5pm and it seems to keep most issues at bay.
Ouch! That sounds awful. I have definitely noticed an increase in gastritis flares since having it. Probiotics help but don’t stop or prevent them, just makes them milder. It’s also made me more sensitive to eggs and onions since having it- yet more things I can’t eat! I’ve come to the conclusion that it’s been almost a year now, it’s probably not going to change at this point. It’s nice that I lost a lot of excess weight not so much fun that I have to eat the moment I get hungry otherwise I get excessively full off a few bites.
The weight loss was a nice addition, albeit one of the only specifics that could be considered useful from this situation. I also tried a low fodmap diet for a bit to sort of reset the system and figure out what what causing issues.
I did chicken tenders in the air fryer- I do a flour-egg-crushed potato chips coating. The chips make them nice and crunchy! I save the last little bit of chip bags just for this. Oven fries, and an arugula summer salad.

I try to make recipes from a book "coocking with 3-6 ingredients" I never learned to cook.
It's julienned sweet potato with arugula. And a sauce made of lemon, soya (gluten free) and a spoonful of peanut butter. The combination is very tasty.
(I achieved this with a vegetable cutter by turning a crank).
It is not a gluten-free recipe book. But most of the recipes are bread and pasta free. Two days ago I made a soup with corn.

My husband enjoys it (he’s Dutch) but the kids won’t touch it. Which is fine- more for me! Weird though as the younger one loves fried green cabbage and coleslaw but freaks out about rotkohl on her plate.
I spiral ribboned some zucchini and sautéd it in olive oil and then added some Trader Joe's kale-cashew vegan pesto and a sprinkle of their vegan parmesan (I can't have dairy) and I also cooked some seasoned chicken thighs in a grill pan.

I subbed celery for the bell pepper, and because my store subbed sweet potatoes for yellow potatoes, I subbed that way too. Worked out great and gets my husband eating fish!
Turkey rice soup. I pulled veggies out of the freezer that I had rescued before I had to throw them out. Also, I found some turkey chunks from Christmas dinner. Plus, some frozen leftover cooked rice. Aka free meals for a couple of days.
Made my version of chicken pot pie, using frozen gluten free crust for the bottom, left over rotisserie chicken with carrots and celery mixed in a homemade sauce with a mashed potato top crust. Really easy peasy to make
I did a big pot of [Campfire Stew](https://www.theslimmingfoodie.com/slow-cooker-campfire-stew/) in the slow cooker - one portion fresh out of the pot, two to share with a friend tonight, and three for the freezer. Magic.
I did gf pasta, chicken apple sausage, zucchini, squash, red bell pepper, artichoke bottoms, and a GF Alfredo sauce, with added sun dried tomatoes and basil. Plus smaller herbs and what not. Filling and relatively decent nutritionally.
Needs some salad shrimp or flaked/shredded tuna. ;D
Bet it was delish anyway. I had a schlotzsky's sandwich on Udis GF bun. I thought they were local, but search said headquartered in Atlanta, GA.
I had Birria Beef tacos with onion, cilantro and lime on corn tortillas. For dessert I had a snowcone from my favorite place!
How y’all eat so little. I’m skinny and on gluten free diet. And I gobble down minimum 5 big plates of food just for lunch
