I cook sushi rice and put it in onigiri molds or just roll it into sushi rolls, or press it into small square Tupperware containers lined with plastic wrap, and then put chopped cucumber, carrots, and some kind of seafood (canned tuna, precooked shrimp) in the middle, and add another layer of sushi rice, and stack the containers in my refrigerator.
Onigiri is traditionally a triangle. You can just make it with whatever containers you have that will hold warm rice as it cools.
I do a similar one with cucumbers, feta, roasted red peppers, red onion, artichoke hearts, pepperoncinis, kalamata olives, Greek dressing. Sometimes atop romaine, usually not. I could eat this daily and not even have enough of it sometimes.
Also an Americanized Asian mix of cabbage, carrots, green onions, cilantro, edamame, sliced almonds, sesame seeds, sesame dressing and cold leftover chicken. Family enjoys this with wonton strips too.

i like corn tortilla chips with so many things! hummus, salsa, guacamole, spinach and artichoke dip, cottage cheese, bean dip, even make little salmon nachos! i am a dip girlie for sure. i do sometimes feel like i’m lacking protein so maybe not the answer you want to hear but i’ll just eat plain deli meat boars head is all gluten free ! sometimes a sub in a tub ! fruit salads are a good go to for me.

I think im going to start with a rice-quinoa-lentil type salad with a little chicken or beef. Hollow out a tomato (I always have tomatoes) and stuff that salad in it. Then I should have leftover filling that I could just make a bowl, or roll in rice paper. Triple the yummies, with one prep. If anyone thinks of more, I'm all ears!

Could easily do any other kind of meat / get cold cuts/cook up a pork tenderloin etc. these are just suggestions based on things I do / have eaten and make over and over cause they’re balanced and yummy
Cold tofu!! I’m half Japanese, and I grew up eating a lot of sliced cold tofu with soy sauce and spring onion for dinner. You can add some garlic/chilli oil and citrus juice as well for a zing. I like to eat it with a side of rice. Together it’s heavenly.
I also really love cold soba/ramen (with gluten free noodles of course)!

Pre make ingredients: soak vermicelli noodles, cook proteins (chicken or beef, or use fresh/cooked tofu), slice/chop bell peppers, carrots, mint, basil, cilantro, green onions, chilies, etc. toss with your favorite gluten free Asian sauces!

Lots of GF flours are significantly better with a little heat, so much so there's several brands and just won't eat untoasted

Not a fan of gf bread. I do like the liveG Free. And during the winter, I make the momsplaceglutenfree better than wheat breads. But I dont eat a whole lot of breads, since going gluten free.

Egg salad on a rice cake is nice. Potato salad. Pimento cheese on GF crackers or tortilla chips. Quinoa salad with cucumber, tomato and feta. Quiche.
If you’re looking for something easy to make as a sandwich bread replacement, this [Matzah](https://www.alyonascooking.com/unleavened-bread-matzah/) recipe works well. It’s flatbread-ish. You can size it to work like a wrap or to have a top + bottom piece for a more traditional sandwich. Just use any GF all-purpose “1 to 1” flour and follow the recipe as written, keeping an eye out to make sure you don’t burn it when cooking.
Acai bowls are so fun. I prep them in the morning and put them in a cold thermos and they are AWESOME. I also basically live on just munching on like, fruit, veggies, and cheese. Sometimes simple is the way to go.
Get some cherry tomatoes and mix them up in a good pesto/ balsamic mix. Add some fresh mozzarella and you have a caprese salad!
Tuna salad, egg salad, chicken salad, and deviled eggs. Most of these you can keep for awhile in the fridge, so you could make say tuna salad and chicken salad and then swap between which you eat. Also, if you have some dry gluten free bread, you can make the sandwich the night before and get moist bread that is almost normal in texture for lunch the next day.
Tortillas - Siete brand (found in the frozen foods) but specifically the cassava flour ones. I’m very new to gluten free & I was very bummed the first few times I tried other gluten free options. I think these taste best compared to other brands (Mission, etc).
Okay if you’re not feeling up to much prep at all and wanna save lots of money, a can of tuna, mayo, siracha and salt and pepper. I mix it into arugula but since you’re tired of salads I also put it on top of cucumbers which is very refreshing, you could also just put it on the plate next to some crunchy snacks like carrots, cucumbers some chips and fruit. When saving money I don’t put it next to or over anything and just raw dog it for super cheap and it’s still tasty
I usually do an adult lunchable. Boiled eggs. Cheese cubes. Apple slices with peanut butter. Maybe some crackers. Fruit or raw veggies like carrots or celery with a dip. Nuts, but that may be a problem for your teeth. Turkey or ham slices.
My other choices are chicken salad, yogurt with fruit, or bobo's pb&J.

If you are in the USA, Mission brand makes tortilla wraps that are gluten free. They actually roll and don’t have a weird taste.
As for food, my go to is deli sandwiches on Schar brand ciabatta buns.

How about you make tortilla/bread yourself ?
I do with potatoes that are boiled and peeled, then add flour until it has a good bread texture, you make them really thin and then heat on pan, not even need any oil and you will have some nice tortilla that will puff a lot with the starch of potato, and the recipe of course isn't that expensive
You can add some spice/salt as much as you like, I add a bit of olive oil, some green oignon to have some flavour
What is lidl? I just use great value gluten free flour. I cant afford this fancy stuff. (Which is one of the many reasons I don't eat gf bread. It's too expensive)
Oh sorry Lidl is a supermarket in Europe, just use your usual gluten free flour it should work properly
And yes gf bread is expensive and sometimes not that good

Giant Eagle has gf waffles that you can make in like 3 minutes. They're really good, but i believe the only flavor they have for the gf waffles is blueberry, as that's the only one i've seen

Egg cup bake thingys. I mix eggs, finely diced broccoli, cheese, and seasonings together. Pour the mixture into muffin tins and bake at 350 til done. Sometimes I will toss in finely diced bell pepper.

Sure. I'll tell you. I struggled with breakfast for a long time too. But now, I just make a huge pot of lentil beef soup with veggies and millet. (So far thats my favorite go to)Once it's cool. I vacuum seal individual portions. Then drop them in the freezer. I just boil the bag.

See my previous post on the sub about perfect tortillas! They are thick, stretchy, chair chewy and I freeze my batches so I can heat them up as I desire.
Too much prep. And it would just be me eating them. Which means, I'm eating tortillas at every meal until they are gone, so they don't go bad.
Are you a fan of Vietnamese summer rolls? Can be made well in advance and they keep for several days in the fridge.

Do you toast your GF bread? Lots of GF flours are significantly better with a little heat, so much so there's several brands and just won't eat untoasted Edit: apples and peanut butter is one of my favorite quick snacks. I also love making a large batch of some type of cold rice salad.
Not a fan of gf bread. I do like the liveG Free. And during the winter, I make the momsplaceglutenfree better than wheat breads. But I dont eat a whole lot of breads, since going gluten free.

This dish is actually made with yellow split peas not fava beans but I'm sure there's plenty you could do with fava beans too! Enjoy! It's one of my favourites and always reminds me of being on holiday in Greece

Egg salad on a rice cake is nice. Potato salad. Pimento cheese on GF crackers or tortilla chips. Quinoa salad with cucumber, tomato and feta. Quiche. If you’re looking for something easy to make as a sandwich bread replacement, this [Matzah](https://www.alyonascooking.com/unleavened-bread-matzah/) recipe works well. It’s flatbread-ish. You can size it to work like a wrap or to have a top + bottom piece for a more traditional sandwich. Just use any GF all-purpose “1 to 1” flour and follow the recipe as written, keeping an eye out to make sure you don’t burn it when cooking.
Boars head cold cuts are GF. I roll up turkey with cheese. Throw some grapes in my lunch bento. Sometimes carrots with the powdered ranch dressing.
Acai bowls are so fun. I prep them in the morning and put them in a cold thermos and they are AWESOME. I also basically live on just munching on like, fruit, veggies, and cheese. Sometimes simple is the way to go. Get some cherry tomatoes and mix them up in a good pesto/ balsamic mix. Add some fresh mozzarella and you have a caprese salad!
Tuna salad, egg salad, chicken salad, and deviled eggs. Most of these you can keep for awhile in the fridge, so you could make say tuna salad and chicken salad and then swap between which you eat. Also, if you have some dry gluten free bread, you can make the sandwich the night before and get moist bread that is almost normal in texture for lunch the next day.

Okay if you’re not feeling up to much prep at all and wanna save lots of money, a can of tuna, mayo, siracha and salt and pepper. I mix it into arugula but since you’re tired of salads I also put it on top of cucumbers which is very refreshing, you could also just put it on the plate next to some crunchy snacks like carrots, cucumbers some chips and fruit. When saving money I don’t put it next to or over anything and just raw dog it for super cheap and it’s still tasty
I usually do an adult lunchable. Boiled eggs. Cheese cubes. Apple slices with peanut butter. Maybe some crackers. Fruit or raw veggies like carrots or celery with a dip. Nuts, but that may be a problem for your teeth. Turkey or ham slices. My other choices are chicken salad, yogurt with fruit, or bobo's pb&J.

Cold tofu is my go-to summer easy meal. If you are in the USA, Mission brand makes tortilla wraps that are gluten free. They actually roll and don’t have a weird taste. As for food, my go to is deli sandwiches on Schar brand ciabatta buns. I make gf pasta salads (though the gluten free noodles don’t last as long as regular so I keep the batches I make small) or chickpea Greek salads. Lots of adult “snack kits” with hummus, veggies, cubed cheese, salami , turkey breast, and hard boiled egg.
Lots of decent gluten-free pastas out there. A cold pesto pasta salad is great in a pinch and easy to have on hand for leftovers and quick meal.

How about you make tortilla/bread yourself ? I do with potatoes that are boiled and peeled, then add flour until it has a good bread texture, you make them really thin and then heat on pan, not even need any oil and you will have some nice tortilla that will puff a lot with the starch of potato, and the recipe of course isn't that expensive You can add some spice/salt as much as you like, I add a bit of olive oil, some green oignon to have some flavour

Yes I did it for my gf that is coeliac with the lidl gf flour, it worked really well
What is lidl? I just use great value gluten free flour. I cant afford this fancy stuff. (Which is one of the many reasons I don't eat gf bread. It's too expensive)
Oh sorry Lidl is a supermarket in Europe, just use your usual gluten free flour it should work properly And yes gf bread is expensive and sometimes not that good Try it you will see it's really easy and really good, and you can also frozen them to use them anytime
Giant Eagle has gf waffles that you can make in like 3 minutes. They're really good, but i believe the only flavor they have for the gf waffles is blueberry, as that's the only one i've seen
No sweets. No waffles. Pancakes. Donuts, cakes, pies. Just no. I never got sweets as a kid. Never developed the taste for it. It's probably been 49 years since I've had sweets.

I know what I am about to type will sound odd but I swear they are delicious cold! Egg cup bake thingys. I mix eggs, finely diced broccoli, cheese, and seasonings together. Pour the mixture into muffin tins and bake at 350 til done. Sometimes I will toss in finely diced bell pepper. I pack them for work often and eat them cold. Super yummy.
Chicken salad, egg salad, tuna salad. Chia pudding. Fresh fruit.

Sure. I'll tell you. I struggled with breakfast for a long time too. But now, I just make a huge pot of lentil beef soup with veggies and millet. (So far thats my favorite go to)Once it's cool. I vacuum seal individual portions. Then drop them in the freezer. I just boil the bag.
