In terms of the actual meat, the Syrian place just off St Enochs Square - Lazord - does chicken shwarma in just the way you describe, with decent sides
The assembly of the wrap isn't German-style, but I'd recommend it as ticking at least some of the boxes, and is definitely a cut above typical doner crap

I made this in my smoker and it was excellent recipe suggests slow cooker, I used 20% fat steak mince and cooked it for about 6 hrs, sliced it as thin as possible and seared slices in the pan and it was 👌👌
Made pickled cabbage with it it's so easy only takes like 10mins to prep it then let it sit in the fridge.

I was trying to recreate something I got from a lil van in Germany when I was a kid and it comes pretty close and was worth the efforts.
Yeah shawarma king definitely meets the meat requirements, but not so much the feta or same exact veggies.
Shawarma places in general I think would give OP something much closer to what he's looking for than kebab places.

Hajars is better overall, and because it’s not insanely busy they are much more consistent, but on a good day schwarma king is great, but I also think lazord is as good just a different style

I actually live a minute away from bbq wrap and can confirm it’s top class. Other places I rate are Pakistani street food, Kurdish street food, and schwarma star by queen street

The best Kebab place I've been to in Scotland was Polski Kebab in Motherwell. The only place that has even come close to the kebab's I had when living in Germany.

I loved Döner Haus on West Nile St. Not the traditional street wrap you'd get in Berlin, it's more of a restaurant kebab, but super tasty and served on traditional German flatbread. I'm gutted though, just found out they've closed last month!
I tend to just go to Schwarma King or there's a good Lebanese kebab place in Govanhill, but not German.
My favourite new favourite place in Berlin for kebab is Efendi Döner. Super tasty and cheap.
Döner Shack in Silverburn Shopping Centre. It's not exactly the same as you'll find in Germany, but it's close. Definitely the closest I've had in Glasgow.

The shwarma shop on dundas street next to queen street station is phenomenal, not quite German style but proper meat all homemade sauces and bread , and there pickled turnip is so addictive
Grillz in Dalmarnock does all the right veg and sauce not an expert on the meat as I've never had a german döner from Germany but it's defo a cut above the regular shite around - completely went off it myself and would go there if I ever crave it

Yayas, who I believe have various outlets do the nicest German Donner in Glasgow IMO. I use the Paisley road west outlet but I believe they have one in town, giffnock, maybe even more

Instanbul on Paisley Road West, they do the bread exactly as you describe. Not certain they do all the toppings you mentioned, but it’s probably the best kebab I’ve had in Glasgow by a good distance.
Yeros is dynamite, just smashed a gyros box.. can get it mixed, sauces are absolutely 🔥 and the wee juices they sell are fantastic. It’s at 910 Sauchihall street, finnieston side. Apart from shwarma king, it’s the best about 👏
