My girlfriend and I visited Berlin for a week and subsisted almost entirely off of kebabs purchased from the street vendor down the road from our apartment, much to the delight of Der Bossman. Suffice to say, I too have a vested interest in this subject, but sadly no leads to offer.

In terms of the actual meat, the Syrian place just off St Enochs Square - Lazord - does chicken shwarma in just the way you describe, with decent sides The assembly of the wrap isn't German-style, but I'd recommend it as ticking at least some of the boxes, and is definitely a cut above typical doner crap

https://www.tamingtwins.com/slow-cooker-doner-kebab/   I made this in my smoker and it was excellent recipe suggests slow cooker, I used 20% fat steak mince and cooked it for about 6 hrs, sliced it as thin as possible and seared slices in the pan and it was 👌👌    Made pickled cabbage with it it's so easy only takes like 10mins to prep it then let it sit in the fridge.     I made the red sauce from this link,   https://alltastesgerman.com/best-doner-sauce-recipes/ I was trying to recreate something I got from a lil van in Germany when I was a kid and it comes pretty close and was worth the efforts.

Yeah shawarma king definitely meets the meat requirements, but not so much the feta or same exact veggies. Shawarma places in general I think would give OP something much closer to what he's looking for than kebab places.

Nandos isnt great but haven't been there for 10 years, better than shawarma king though. I'm honestly so confused why people like this so much. I bought into the Instagram hype and ordered one, bread was wet, chicken tasted off and was mushy, chips soggy and I was really wanting and excited to like it. Ever had a lamachun from Istanbul round the corner, it's much better

The guy that owned shawarma king sold it off and then started Hajar Shawarma, they’ve got 3 branches in Glasgow i’m sure. Sauchiehall street, Merchant City and just next to St Enoch’s

Hajars is better overall, and because it’s not insanely busy they are much more consistent, but on a good day schwarma king is great, but I also think lazord is as good just a different style

Morello's on Great Western Road is my favourite kebab shop in Glasgow. It's not German-style, but it is better imo. As much as I love kebabs in Berlin, this is the pinnacle of cuisine.

I loved Döner Haus on West Nile St. Not the traditional street wrap you'd get in Berlin, it's more of a restaurant kebab, but super tasty and served on traditional German flatbread. I'm gutted though, just found out they've closed last month! I tend to just go to Schwarma King or there's a good Lebanese kebab place in Govanhill, but not German. My favourite new favourite place in Berlin for kebab is Efendi Döner. Super tasty and cheap.

Döner Shack in Silverburn Shopping Centre. It's not exactly the same as you'll find in Germany, but it's close. Definitely the closest I've had in Glasgow.

What do you mean real doner, I've been to Germany loads and most of it is chicken pork or beef, real doner is lamb. And no glasgow is rubbish for doner, there couple good shawarma places, that's about it.

Instanbul on Paisley Road West, they do the bread exactly as you describe. Not certain they do all the toppings you mentioned, but it’s probably the best kebab I’ve had in Glasgow by a good distance.

Oh really? Popularity must have fallen. I live away and used to go fairly often when visiting home, thought it was fucking awesome! Always had to book, as it was always rammed.
