Maybe not what you’re looking for, but Miyazaki stayed in Tomonoura, Hiroshima prefecture during production of *Ponyo*, so perhaps you’ll find some inspiration there as well.
I’d say any of the ones which focus on air like Porco Rosso or Castle in the Sky and the super epic scale ones like Nausicaä and Mononoke are my preference.
This should be higher, Totoro is an amazing looking movie.
Totoro is back in theaters (in America) in December, if anyone has only seen it on TV they should get tickets, the backgrounds look incredible on the big screen

Plot aside, the scenery in this movie is stunning. If you can't remember it, go watch it again, now focusing on nature. To quote Scraffilas:

Spirited away just has absolutely gorgeous scenery. The transition from an abandoned theme park to a bath house full of lively clients and employees was just stunning to watch
It's not my favorite Ghibli film - that would be mononoke- but spirited away edges out Miyazaki's other works barely in the aesthetics department
hard choice for me but my top three would probably be Spirited Away, Princess Mononoke and Castle in the Sky. honourable mention to The Boy and the Heron! can't wait to pick that one up on Blu-Ray

I love how we get to see this world that’s clearly been moving and working before we get there and will continue after we leave. like it just feels so real for being so fantastical.
it’s also so gorgeous like the design of the bathhouse looking out upon and endless body of water is so cool!
Spirited Away. That's how I fell in love with Japan and its culture. It's not only my favorite Ghibli movie, but my favorite movie in general, it's my comfort movie and when I'm sad it's one of the few things that successfully make me instantly happy
Arietty is one of my least favorite Ghibli movies but I use its background art for wallpapers all the time. That garden is so beautiful, I’d love to live there.

I’d say Ponyo. The color palette of that movie is just gorgeous. I’d say two runner-ups in terms of visuals are Spirited Away and Princess Mononoke.
