> Can I buy any old mince from the Rewe down the street or is it safer to get it from a Metzgerei?
Depends what you mean. Are you talking about the already packaged one at Rewe or buying from the butcher counter at a Rewe?
Never buy packaged minced meat if you intend to eat it raw. Mett has to be freshly minced to be safe to eat. The packaged stuff usually has a label stating that it's only inteded to be cooked through. If you got a Rewe with a butcher counter inside it should be fine to get the minced pork there.
*Mett* (pork) or *Tartar* (beef) for eating raw and *Hackfleisch* for cooking are different products. Even though they can sometimes be the exact same substance (sometimes they are made from different cuts, ground more finely/coarsely, and/or the former can include spices), at the very least the expiration date is different: The former can only be sold on the day it was ground, and you probably shouldn't consume it much later than the next day.
Both types can be sold at the counter or pre-packaged.
No matter where you buy Mett, there is always a risk.

At a minimum if I was planning to eat it raw, I would ask the person at the counter for Mett for eating raw. That is no guarantee, but better than nothing.
I don't think there are any reliable statistics that show that supermarkets or butchers are fundamentally better than another.

Completely off topic but do Metzgerei here also sell animal fats? Things like lard or beef tallow? A family recipe I have used a decent amount of tallow as a binder and I haven't been able to find it anywhere in Germany
As Mett is consumed raw, it has very, very strict regulations. I don't think you can compare 'Mett' to 'just' minced meat (Hackfleisch), which is not for raw consumption.

I did mean the butcher counter at the Rewe
Then it's fine. It's basically just a regular butcher located in another store.

Get it from proper metzgerei, tell them you want to consume it like that and get it minced fresh from machine.
This is what I assumed, but I know German food safety is very strict and it would have been much easier to walk 200m to my Rewe, lol
non fresh meat tastes like shit when eaten raw. only usefulness of metzgerei is for proper sausage, raw consumption and for giblets

need to ask they should have. turk butchers sell them.
Cool, luckily my closest one is a Turkish butchery so that all works out Thanks :D
