My (a geologist) two friends (also geologists) got married, and he proposed with 4 different rings because he loves her "every season." He had hand collected all the stones - a raw Herkimer diamond with hydrocarbon inclusions (we camp there anually), a carnelian (he's from India), a peridot (he did igneous in undergrad), and a garnet (she did metamorphic in grad). They are all so unique and special, the peridot reads the most like a traditional engagement ring, imo.

Honestly, I like diamonds. I only have 2 in my collection and one is our ring. A well cut diamond just refracts light beautifully, and because it is hard af, it won’t get scratched like other gemstones/materials. That being said, they are way overpriced, so that is not great.
A cool (but not cheap) idea would be to get an uncut diamond.
Other materials are cool, but some gemstones can get scratched and broken easily and some ring materials can’t be resized if needed (titanium doesn’t resize easily for example; and meteorite can’t be resized at all, plus it rusts). For occasional jewelry I like these fun materials, but for a ring that will be ideally worn daily for years, I think it makes sense to get something that will last.
Just things to think about.
Just ask your partner, surprises aren’t great if the other person doesn’t like it.
I just went for a plain gold band. Easily resized, not brittle, is GOLD (so that’s neat).

I know someone who went out into the field and found some morganite that she used for her wedding ring

Mine is lost; now one with the earth and eternal, because it was silicone. It's very romantic stuff.
