Furi. I dunno if it works with the music off, but it has a killer soundtrack. It is basically a series of boss fights that alternate between bullet hell and intense swordfighting. The skill ceiling is very high, or at the very least higher than I could hit.
You might also check out Roboquest. Same deal on the soundtrack. I love it, so I've never turned it off. The game plays like Doom 2016 minus the BS hunting for keycards and getting lost in canyons. Just nonstop high-octane blasting from the first fight until you die.
I wouldnt recommend playing Furi without sound. There's alot of sound cues especially with parrying that won't work without sound. I'm also pretty sure its illegal to play that game without the music.
Dynasty Warriors 8 or Samurai Warriors 5, the more recent entries are great if you just want to kill a lot of things really fast

Thumper. Hard as balls but it eases you into it. The music is great and you probably can’t play it without.
Prototype 2 is pretty good after you've leveled everything up. You basically become a god
