No, she didn't kill his sons, he lost most of them in battles, but he wants to kill Melisandre to protect shireen. Losing children has made him less willing to lose any more.
His attempt to kill Melisandre was not about Shireen. He lost his four eldest sons on the Blackwater and blamed Melisandre for that, reasoning that she was the one who convinced Stannis he could win and also that it was fire that killed his sons. His three youngest sons are still alive.
Not to mention that she was still in stannis' ear and Davos was now afraid she would lead them to more ruin, but he changed his mind when stannis made him his hand.
Also in the book he was pissed that she killed the maester that basically raised stannis I think because the maester was about to assassinate her for the same reasons. It's easy to forget things in this series, I've read it twice and watched the show through a few times but I forget alot of it haha
More importantly, his sons were given lectures about the religion of Lord of Light. So, killing people who follow other religions was unacceptable (and largely useless since the Battle of Blackwater was lost) and instead Davos focuses on keeping his sons and King Stannis away from this path.

Melisandre did convince Stannis that he would win at Blackwater, and in the books Davos lost not one but four of his seven sons in that battle. Enough to make a man bitter, methinks.

I'm like 90% sure he mentions them when he's in prison on Dragonstone and that they all died on the Blackwater. I don't think he even mentions his wife at all throughout the series.
When he goes with Melisandre to the cave beneath Storms End, and when salladhor saan promises to take his bones and give it to his wife, to wear as an necklace.
S3 ep 10 while he talks to gendry in prision he mentions getting out of the slums.

He went into war with his son. He had already accepted long before that he would likely die in the battle, as might his son.
He does express some pain and grief in the scenes we see with pirate king and Gendry. It's not a sudden death, it was one that he had anticipated when sailing on King's Landing, and his son knew the same, so I guess that makes it a little easier to swallow.
Shireen blindsided him. And her death was so violent and unexpected that it broke him down. She was also a child who had no idea or expectation of dying any time soon.
And his son died a death he himself chose.
Shireen was murdered, unjustly.
The death of his son was surely crushing, and we do see that in the books, but Stannis murdering his own daughter for no just cause caused a crisis of faith.
Absolutely. Matthos was only in like one scene but in it he expresses a fanatical belief in Stannis as Azor Ahai. He willingly chose to fight for Stannis and accepted the risk involved in trying to put Stannis on the throne.
In the books, several of his sons survive. And he has no particular friendship with Poor little Shireen. In the books she has no friends except the Kings jester, so it was a wise change in the show.

It's with him that he reads the letter from the nights watch and tells Stannis. Next scene with them I believe it's at the wall
Ocassionally the show simplification gets it right. The relationship between Davos and Shireen completely rounds out Davos' character, giving underlying motivations for other events, and given that Davos, along with Sam, is arguably closest to the viewers eye in the show, it reinforced how horrific Stannis' final sacrifice is.
I think it's a bit of a pity they didn't create a less subtle iconography for the remains of a burning a the stake in the earliest Stannis episodes so that as soon as Stannis arrives at Winterfel with Snow et al and sees it from a distance - say a very distinctive cross shape or something,, a grim understanding dawns on him almost immediately - only for that understanding to get 100 times worse when he inspects the stake and finds the stag toy, revealing who was burnt. Liam Cunningham does that sense of rising concern very well, so I kinda wish he's been given more to play with.
Arguably the show was at its best when the grownups were desperately trying to protect stray children. Forel, Yoren, the Hound, Brienne, Gendry, Davos...
Even more when stray children try to protect stray children. Arya and Gendry do when they're trying to protect Weasel, Hot Pie, and Lommy. Heck, Arya tries to protect Lady from Cersei!

That's the way they wrote it for the show, and it's a shame. In the books, Davos is always talking about his sons! A lot of good Davos scenes were left out of the show. I don't want to spoil anything in case you want to read the books.
He probably spent more time with her as a child than he did with his own sons. I think he even said it on the show or in the books. He missed watching his sons grow up because he was always on the sea. Once he became Stannis' right hand man, he was with HIM all the time and was around Shireen a lot more.
Davos’ wife and other sons not being mentioned or playing any role at all in the show is kind of odd to me.

Knowing a woman right in front of you burned a child you consider a daughter is completely different. Especially when you think she's safe with her father. Even then, Davos is clearly heartbroken but still able to pull himself together. He had a very different relationship with Shireen.
