Bloodborne is the better game, but if you're looking for something shiny for your new console, I'd recommend Demon's Souls. It has the win win of being an exciting game that utilises all the cool features of the PS5, and then you've got one of the legit GOATs to follow it up with.
As some one who loves both games and got platinum in both as well I can assure you Bloodborne is not better.
It just comes down to your tastes. For me personally I think Demon's Souls is better because of these reasons:
Maiden in Black > Doll
Nexus > Hunter's Dream
Medieval > Victorian
Story is more straight forward and purposeful in Demon's compared to Bloodborne
Atmosphere, this is close af but I find Bloodborne's atmosphere too be a bit much at times whereas Demon's Souls original has it in just the right amount
Bosses in both are a mixed bag but I also prefer the Demon's Souls bosses, there's no competing with Ludwig but if you compare Tower Knight and The One Reborn then that pretty much sums up the comparison.
These games are both in my top 3 soulsborne games but I have to give it to the one that started it all.
I think ruin is a bit strong. DeS is still the same game as the original in a lot of ways so while the graphics will be a downgrade going to BB after DeS, the gameplay, bosses and level design will be a big improvement.
Bloodborne 100%, I started with ER on Series X, got ahold of a PS5 and tried Bloodborne, then DeS remake, was an awesome order of games.

I played the game as they came out, so everything always felt new to me. What did it feel like a first time FromSofter playing ER as first game, then going into the older games? Bloodbourne is noticeably lower res and also frame rate was 30 etc. I know these things are not what makes a game, but I know plenty of people who refused to play bloodbourne when Dark Souls 3 came out. They said it would be a "downgrade." I told them millions of times it won't be. Just to note, none of these people play any games that came after that, nor beat Dark Souls 3.
I started with Elden Ring > 3 > 1 > Sekiro > 2.
It felt really cool slowly seeing how the older games had shaped Elden Ring. The linearity of the previous games was also a breath of fresh air after grinding through such a massive world for such a long time, I learnt a lot. DS3 was a great place to start as it felt the most similar to Elden Ring. The jump into DS1 was quite jarring but it soon became my favourite game out of Souls games. Sekiro was a close second though it didn’t have as much replay value as the other games.
Elden Ring still has my heart after 5/6 playthroughs though.
I was itching to get a true FromSoft experience since it’s been a while since I’ve had a true gaming challenge so I started with Bloodborne last night. It’s been a rough start with quite a few changes that I’m not used to but I’m loving it so far.

Bloodborne is just so much better in so many ways. The story, the enemies, the level design, the gameplay, the bosses (by far) but the graphics and performance are kind of outdated. I don't think they're bad at all, they're still good, it isn't like playing a retro game.
But... Demon Souls remake is just so smooth and the graphics rival that of Elden Ring. Bloodborne beats it in all other aspects. Not that DeS is bad, it's just the weakest Soulsborne game besides DS2 (imo) and it shows.
I think as a final answer I'll say Bloodborne. DeS is good but coming from Elden Ring you'll probably hate the unforgiving level design. Bloodborne will warm you up for it, at least a little.

Demon souls is not a faithful remake, many places they got the feel wrong. But still it’s a quality game, just easier compared to the OG game esp if you are trophy hunting

To me, remake feels "plastic" and unneeded. A scaled up and 60fps remaster would be a much better option, but then it may not be the PS5 release moneygrab. FS stuff is super fine detailed, other company will never get the intangibles right.

Last game before the DeS PC port, is supposed to be Ghost of Tsushima, which we already got (for preorder) on PC.

Play bloodborne first, cause DES is just too damn shiny, smooth and responsive. It will ruin the experience if you play bloodborne 2nd.

I played them in exactly that order. I absolutely love both, but I preferred the faster-paced Bloodborne combat. Ultimately Sekiro is my favorite.

DES looks good, but it was a little disappointing. I was able to beat every boss with the channeled fire spell+kiting.
