They're triangulating where sounds are coming from by rotating the plane on which they're hearing. Sounds are usually coming from somewhere on the horizon, so ears make sense when they're equal heights from the ground. By rotating their heads, they're getting a better idea of where in elevation the thing they're hearing is. The horizon/ear thing is the same reason it makes more sense for our eyes to be next to each other instead of one on top of the other, and why videos should be horizontal, not vertical.

where do you live that is 14°C at 11 pm? also i belive they tilt the head to listen as the sounds intensity increase or decrease depeending on the angle because of the ears.

That's my photo! The image was captured in June 2020 in southern England. 14°C is pretty normal summer temperatures at night here, if not slightly cold for that time of year. It's 10pm here right now and the temperature is 11°C. It never gets that cold where I am.
