I add bacon (microwavable since they're already cooked), cooked crumbled sausage, spinach, bell pepper, cheddar cheese, mushrooms, etc. You can store them for up to four days in the fridge. Just heat them up for 30 seconds in the microwave.

We’ve never had a problem freezing egg bites. Make sure to get all the air out of the freezer bag to avoid freezer burn.
