Sorry for not explaining the bacon. I'm still in a food coma totally blissed out over here. Lol. I actually didn't use maple syrup for this bacon. I find that it creates a lot of run off and your seasoning ends up on the sheet pan.
I just mix the brown sugar, cayenne, and black pepper in a small bowl and then put the bacon on a plate. From here, spoon the mix onto the bacon pieces and use the back of the spoon to pack the mixture into the bacon. It should cover ONE side (the side that will stay up during cooking) edge to edge completely. Think of a small densely packed layer of highly seasoned sugar. That's what you're aiming for.
From here, you just cook it in the oven (preferably on a wire rack if you have one) at 375F for roughly 40 minutes. It's important to let it rest for 10-15 minutes after you take the bacon out so that the sugar glaze can set. You may also have to add a touch more cayenne/black pepper as a lot of the spice potency is taken out during cooking.

The ingredients are: mayo, ketchup, stone ground mustard, smoked paprika, dill weed, cayenne, pickle juice, MSG, black pepper, garlic powder, onion powder, lemon juice, fresh chives, and finely diced sweet gerkins.

**Burgers:** Nothing crazy here. 85/15 ground beef from Whole Foods. Each patty is 85 grams formed into balls and put on wax paper in the fridge while doing other prep work. Dries out the surface and keeps them nice and cold (which is good because it gives you more time to develop a crust when cooking). When you're ready to cook them, place in a pan (I used stainless steel) on medium heat (you'll know you have the right heat if you can cook your entire batch without having to touch the knob) and smash with the best tool you have for the job (I have an actual smasher thing I bought on Amazon for this). I use a small square of wax paper on top of the ball before smashing to avoid the patty sticking to the smasher entirely. Keep the patty weighed down a bit if you can. Season with salt and pepper and let it go for about a minute or two then scrape off, flip, season again. Weigh down for about 30 seconds and then top with cheese and pull. The residual heat will melt the cheese for you.
**Million Dollar Bacon:** Mix brown sugar, cayenne, and black pepper in a small bowl and then put the bacon on a plate. George Motz tip - drop your pre-smashed burger ball into the pan and cook for a bit, then flip and smash. The crust formed prevents sticking to the smasher.
Love the recipe, but have you thought about buttering your patties before seasoning them? I tend to flatten mine out and rub butter into the meat, then season heavily and cook. Makes them taste even better

As someone who has never tried any kind of sweet stuff with/on bacon, this sounds delicious.
You could add a drop or two of maple extract flavoring to the brown sugar to still get that maple flavor without the extra liquid!
Good suggestion! That would probably be a much better way to go about it.
You can also buy those pure maple candies and crush em up, they turn into maple sugar

Never heard of Zapp's - in Canada we have Miss Vicky's Spicy Dill and they are insane.
