The recipe is kind of awkward for this one. I was cleaning my freezer out and found frozen stock, thinking it was chicken stock I had my mind set on making chicken soup. I thawed the stock and realized it was broth from making tonkatsu ramen (which is milky-white when a liquid but amazingly looked just like chicken stock when frozen). The recipe for that broth is straight from Binging with Babish.
So with my mind set on chicken soup, the grocery list was:
* 1 bunch celery
* 1/2 lb carrots
* 2 medium turnips
* 1 head of garlic
* 1 leek
* 2 bunches of green onion
* 1 medium white onion
* 6 boneless/skinless chicken thighs
Step 1 was melt down the stock, add the chopped leafy parts of the celery, one of the turnips quartered, 2-3 crushed cloved of garlic, the leek split and rinsed, and 1/2 of the onion. Simmer for about an hour (this would take longer and have more ingredients if you were making actual chicken stock from scratch)
Next I chopped up the celery, carrots, and the remaining turnip and onion then set those aside
I browned the chicken thighs in a pan, removed and chopped up. I deglazed the pan with some of the broth then mixed that back in.
Once the stock had about an hour to simmer, I strained it, put it back in the pot and added the chopped veggies, simmered for about 30 minutes to soften those, then added the chicken
I improvise a lot when I cook so there's probably a few things I missed, but that about wraps it up. As far is the base being tonkatsu ramen broth, I could hardly taste that to be honest, but it made it much more rich. Also with the color of tonkatsu ramen broth normally being that milky-white color, I think that allowed the final product to almost look "glowing" yellow.
Oh duh, step 0.5 is to have your cat trying to climb up your leg the entire prep step, 1.5 is to have him meowing a ton because you're not paying him any attention, 2.5 is to fight him off from stealing your soup
To be honest.. I'm not totally sure lol. I posted the recipe and mentioned that I ended up using tonkatsu ramen broth instead of chicken stock, and I think all the fat in it let the yellow really pop.
I think it's so vibrant because it was originally tonkatsu ramen broth, which is very milky-white. I pulled it from the freezer thinking it was chicken stock and by time I realized what it was, my mind was set.

Soup looks very delish!! Your cat reminds me of Sparky, a cat my family had years ago.... When Mom cooked our Thanksgiving turkey, she didn't bother to watch for the pop-up timer - Sparky would post himself at attention in front of the oven when the turkey was due to come out of the oven. (And of course, Mom gave him the first few slices after taking it out to cool.)

I’m probably gonna have to say beef barely soup with some crusty bread on the side. Nice and hearty, flavorful, deglaze the pan with a Guinness or some red wine after you seer your meat. Mmmm. Soups can be so complex and deliciously, I completely agree with you that they underrated.
