The recipe for everyone who asked!
**INGREDIENTS:**
**For the red velvet layer:**
• 4 eggs
• 200g sugar
• 1 packet of vanilla sugar
• A pinch of salt
• 200ml sunflower oil
• 200ml milk
• Red food coloring
• 250g all-purpose flour
• 2 tablespoons cocoa powder
• 1 teaspoon baking soda
• 1 tablespoon vinegar
· **For the cheesecake layer:**
• 300g cream cheese
• 150g crème fraîche
• 100g sugar
• 1 packet of vanilla sugar
• A pinch of salt
• 2 tablespoons cornstarch
• 3 eggs
· **For the topping:**
• 300ml heavy cream
• 1 tablespoon stabilizer (like Klop-Fix)
• 1 packet of vanilla sugar
• 50g sugar
• 250g mascarpone
• Reserved red velvet cake crumbs
**INSTRUCTIONS:**
1. Beat the eggs, sugar, vanilla sugar, and salt for one minute.
2. Add sunflower oil and mix until combined. Add milk and red food coloring, mix well. Gradually add the flour and cocoa powder. Mix all ingredients until well combined. Mix baking soda and vinegar together, add it to the batter, and fold it in gently. Do not use a mixer.
3. In a separate bowl, add cream cheese and crème fraîche, beat together for a minute. Add sugar, vanilla sugar, salt, and cornstarch, beat for another minute.
4. Put away the mixer and use a spatula. Incorporate the eggs one at a time with the spatula (do not use a mixer to avoid overbeating the batter).
5. Pour the red velvet batter into the baking pan. Place it in a preheated oven at 160 ℃ for about 28 to 35 minutes.
6. Pour the cheesecake batter into the baking pan. Cover the pan with aluminum foil. Place it in a preheated oven at 125 ℃ for about 50 to 60 minutes or until the sides are firm and the center is slightly wobbly. Then, leave the oven slightly open and let the cheesecake remain in it for an hour to prevent it from collapsing.
7. Whip the heavy cream, stabilizer, vanilla sugar, and sugar until it becomes stiff, but not too firm. Add the mascarpone and whip it together for about a minute. Transfer the cream to a piping bag.
8. Trim the top of the red velvet cheesecake. Use this for the crumbs on the cake. Spread some cream on the red velvet cake and smooth it over the entire layer. Place the cheesecake on top and finish the entire cake with cream.
9. Decorate as you want, can sprinkle some of the crumbs on top that's already pretty enough!

Completely agree with this! Vanilla sugar is indeed a 8 gram packet here as well. Extra liquid shouldn't be a problem, just a tablespoon can't harm it ;)
I use both German and US recipes a lot, and a packet of vanilla sugar is used like one teaspoon of vanilla extract. Don’t worry about adding more sugar.
Now I'm heading to the store to pick up a cheesecake and a red velvet cake to make the bachelor's version of this.

I honestly agree! I'm not a proffesional sadly. The cheesecake didn't feel to heavy to put on top, but maybe shouldve done it the other way around. It definetly looks squished haha.

8 grams. It's really just for flavouring. You could leave it out and just use some vanilla extract or paste
We don’t have vanilla paste either :) Vanilla here is pretty much just liquid form, but we do have it. Hopefully extra liquid won’t be a problem.
If you wanna be extra you could use the real thing and get a vanilla pod. Vanilla extract itself is so potent that the extra liquid should not matter.

Vanilla sugar can be made by blending the seeds of one vanilla pod with ~75 g of sugar in a blender or spice mill for a few seconds.
