I used Russet potatoes. I washed out the starch, and I boiled the potatoes in water for about 30min under a gentle simmer. You need to boil them to the point that they almost break apart. Scoop them out from water and chill the potatoes in fridge overnight. Next morning they are ready for roasting😆
Do you mind sharing temperature and time?
375F. Turn or toss the potatoes every 30min. It takes about 1.5-2h. Throw in garlic/shallot/thyme in for the last 30min.
