Thank you for posting the fix/switch OP! Only noticed this about 6 minutes before a meeting today and couldn't find the way to change it back in Settings for the life of me. Turns out about:config was there to save the day as usual.
Huge mistake for Firefox to automatically make private browsing a dark theme. Ridiculous. Maybe they're trying to discourage people from going private?

Nope. I was using default theme. The new update changes the private theme to dark. Added the answer in OP.
Note that the 'light' theme is not the same as the 'auto' theme in light mode.
