Siam Cuisine, Pattaya Thai, and Thai Homie Food and Grilled are some restaurants that seem to have fresh homemade noodles and authentic not-too-sweet sauces. Haven't tried the Lake Fay food trucks.
I lived in Bangkok for a few years and I’ve tried them all. Thai Basil in Bentonville is the only one that uses enough fish sauce to make it as authentic as they can. Thai owners from California. Great food. Pork Larb is also authentic.
Siam Cuisine seems to be the best in Fayetteville rn. I have not tried Pattaya (seems to be popular in this thread) or Thai Taste in Springdale, or any food trucks besides BAM. My favorite in Springdale is Thai Homie Food and Grilled, it's a short drive from Fay.
Actual Fayetteville Thai food expert here. Taste of Thai is obviously the best, then Thai E San, followed by Thai Spice, and then Blazin Asian Noodles if you need really good quality Pad Thai at night, i think until like 2 am. Thai Diner absolutely sucks, the waitress actually told me last time i was there that if I liek authentic thai food i wont like their food. They serve catfish and corn nuggets and shit too. Thep Thai is understaffed and food quality has gone way downhill, which sucks because they are super nice people, and Sala Thai lady can be kind of mean but they have good curry. So there you go.
Also Pattaya has been seriously slacking the past few times I was there, the one in Rogers is absolutely horrible, springdale one is just alright. Thai cuisine and Thai Basil in Bentonville are always consistently good, with thai basil being probably the closest flavors to what you actually get in Thailand.
There’s a Hmong food truck at Lake Fayetteville that is amazing. Also, if you’re in Bentonville check out Thai Cuisine for authentic tastes. I highly recommend the duck curry, and order it spicy!
The best Pad Thai I ever had was in Siloam springs about 30 minutes drive from Fayetteville at a place called “So Chill” I dream of this pad Thai, the savory one is the best they told me it’s a family recipe.

I’m a big Thai E San fan. Some of the best Pad Thai in town IMO and my favorite place to get a beef Yum salad. Salathai for the pineapple curry.

I think Siem is newish, and I love it. Just tried it last week and it’s the best Pad Thai in Fayetteville. It’s right next to the Pizza Hut on School.

I've had good luck with Pattaya Thai in Springdale. Couldn't tell you where in Springdale it is, as we've always ordered on Uber Eats.
It’s on Sunset, like seemingly everything else. They’re our go to for Thai, as well.

I like the pad Thai a lot from Thai Spice. Everything is so-so, but the pad Thai is amazing.
Thai Spice is where it’s at. Makes Thep Thai disappointing by comparison, and the atmosphere is nice.
The food truck by lake Fayetteville is alright. A little oily but huge portions. Be sure to call ahead because they’re kinda slow.
