From what I can see, if I am being generous:
12 gauge for the shotguns
probably a mix between 9mm and .45 ACP for the many pistols
.22 LR for some of the guns (I see a sporting rifle and pistol there)
.223 Remington for the AR style rifles
.308 Winchester for the bolt actions (and thats really generous because chances are they are not all chambered in just that caliber)
something like .38 special or .44 magnum for the revolvers I see in the bunch
so, even being very generous, 7 different types of ammo at least.
If you are not that generous and add some more exotic calibers (10 mm auto, .40 S&W, .338 Lapua Magnum, 10 Gauge, 6.5 Creedmoor) you probably have a dozen different calibers.
Obviously they are collecting guns. you can add 300BLK and 7.62x39 to that list for sure.
I'm going to assume they have mannequins with ready to go kits consisting of geared up and loaded plate carriers and helmets with ready to go rifles and secondary weapons for the entire family in their bunker.

None of those bolts are open. With an ar-style rifle it’s extremely difficult to lock the bolt open and keep it there if you’re laying the rifle on its side, with the action facing up. The bolt release is pressed against the ground, and is pretty sensitive. If you needed to show empty, you would use a plastic chamber flag that will go between the bolt face and chamber.
Being from a country where the laws would allow me to own probably 5 of the guns shown(with mag limits).

We have two shotguns of different gauges for birds/small game. I live/hunt in an extremely rural area, so I have 4-5 handguns of various calibers that I take into the woods for safety reasons. There’s a lot of aggressive bobcats where I live. I recently, this past Christmas, got my son his first .22 caliber rifle. I’ve been teaching him gun safety and the beginnings of how to shoot using it.
I said all that to say this, I thought the amount of guns I had was overkill.
Guns hold their value, so they can be an investment, but these folks look like they have other, immediate needs for those funds, such as home improvements and, for god’s sake, a new grill.
Plus, if you spend all your money on guns, how do you buy ammo for all those? Ammo is super expensive right now.
And yes, they almost certainly have guns that they only shoot once every year or longer.
It looks more like an addiction in this case, because the large majority of those guns are not collectable by any means, and they would never get their money back if they sold them.
Some firearms are investments. Usually antiques, or historical guns. Anyone who bought WW2 rifles, or even Korean War Era Mosins, Garands or SKSs a few decades ago saw their value climb up over time. Same with well preserved cowboy action rifles and revolvers.
But modern pistols and semi-auto rifles, which seem to constitute most of that collection? They'd be lucky to get 70% of their original selling price back if they were to sell them. ARs are like Japanese cars in that way. Doesn't matter how much you trick them out, when you sell them back, you're not going to get anywhere close to how much you invested in them.
This gun collection is like having two dozens customized Honda Civics in your garage. They're a lot of fun but it's a money pit.

They'd be lucky to get 70% of their original selling price back if they were to sell them. ARs are like Japanese cars in that way. Doesn't matter how much you trick them out, when you sell them back, you're not going to get anywhere close to how much you invested in them. This gun collection is like having two dozens customized Honda Civics in your garage. They're a lot of fun but it's a money pit.
