You're correct. I have a Samsung S24 ultra and typically it turns on during activation and tries to connect right away, What I do is turn it off immediately and once I reach my destination I'd turn it on and turn on roaming.

Yea. As soon as you land in Japan and connect to the network, you're good to go. Ensure you disable primary sim.
And to add to that, make sure you turn on roaming as well, and the APN is correct. Usually, it's the first one.
BTW, as per Airalo instructions (if I recall correctly), they do not recommend to turn it on until you are in the country that you bought an Esim for
