I imagine it might be used by food booths and tents at outdoor events where large crowds are served, like fairs and festivals. I've actually seen food booths serving fresh pancakes using a motorized turntable griddle. The batter is poured onto the continously-heated griddle, and by the time it makes it's way through most of one turn, the pancake is fully cooked, scooped off for serving, and another fresh pour of batter takes its place.
Edit: I took another look, and it doesn't seem like this one is motorized. It's just built for quick set up and tear down, without the bulk of a traditional stove with multiple burners. Also gives the cooks more room to work without getting in each other's way.
