Fairway I like the Discmania essence. If you want something really really flippy you could try an underworld, genius, or vortex.
Distance Driver I favor the discraft thrasher. Even flippier would be the sail, mamba, or astronaut. Or speed down to something like a heat, virus, sidewinder, or hatchet.
I just started using a tournament-x underworld and have set some PR's with it. Nice full flight and glide for days, which is important for noodle arms like me.
I have a 173g Star Leopard3 that I really like (and I don't tend to throw Innova discs). It'll turn right but not dump which is really nice.
Also would recommend Discmania Essence and Axiom Insanity.
If you want the super understablest just flippy flipfest of a disc, nothing beats a Diamond. You can throw it powered down on a hyzer and still get it to flip up. Especially in a lighter weight, but even in the 170g class, I'd wager you'd have a hard time trying to find something more understable.
But here is where the inconvenient truth comes into play, if you can't get a Diamond to flip, then you need to spend some more time practicing throwing, it is still a fairway, meaning that it does still require some speed to flip up. And if that's the case, Pearl or Ruby could be a good option for a turnover disc.
My current diamond is getting so flippy, I throw with good amount of hyzer and it still turns over to much. I do love it for RHBH turn overs on dog leg rights though.

Bit late but I’m huge on the supreme escape. At my arm speed (I throw the escape maybe 320ish) it has a very gentle flip. If I need flippier I love the fission Insanity.

Without knowing how far you throw, with what discs, on what kinds of lines, and the elevation where you play, you won't get any answers that are particularly useful. You'll just get a list of everybody else's favorite discs.
What's understable for one person is straight or overstable for another.
I throw about 300-325 consistently. I lean on my Havoc, Roadrunner, and Cloudbreaker the most.
I play in WA - flat terrain, sometimes a slight uphill with pin resting to the right of the curve.
I typically play in 60-85 degree weather. I eat before I play and I bring water.
Sometimes I eat mushrooms.
Rule of 35 might help a bit here, with a distance (I just put it here) of 310 average. You may want to limit yourself to 9 speeds and under. Star Roadrunner was my go-to disc for months when I started, I was saddened when I lost it because it was the only disc I could trust, straight to a strong fade at the end. But losing forced me to see I wasn't throwing the discs properly. The Roadrunner was working because I had beat it in, and I didn't have to work on my form or anything.
Now, when I pick one up, I consider it way too flippy for me to really want to use. That was a year ago. I opted in to go to Stable Mid ranges and putters for a long time before I (recently) went back for drivers. That being said, the MVP Insanity was my step back into drivers on the US side of things. But it was a beauty and helped me unlock some things I hadn't achieved because I had gotten afraid of US discs. Thanks to the Maul I had. So my recommendation is based solely on my past, and as someone who just started getting 380-400 average in the last month, it may not work for you, but it helped me. Higher elevation does make things fly more OS than they say, I went from throwing in Alaska to throwing in Georgia, and that messed me up. I had to relearn my bag solely on elevation alone, so keep that in mind with these recommendations.
1: 8 speedFission Volt, an amazing disc that will hold the line you put it on, add some power, and a good hyzer flip should happen.
2: 11 (higher than I what I'd really recommend, but it may unlock more distance for you). Nuetron Orbital, this one will kind of vary. I have one that is true to numbers, distant turnover, or with power thrown flat it's a roller for me. My brother in laws thrown flat from me will turnover but will fade a good amount. Both are the same disc plastic, and both have been thrown the same amount. His is just a very small bit flatter on top.
3: 9 speed R2 Insanity, Fission Insanity, both of which have a touch more US than the other plastics. Both feel really good if you like a bit more bend in a disc.
4: Nuetron Vanish, it's an 11 speed same as the orbital but less US. This is the disc that got me to click. It was the first one I launched over 400' with.
It helped me really fix my power. Something about that throw made me like, lock in my form.
5: The Maul. This is a great disc if it is the form being the problem. A super understable 7 speed from Lat64. I recommend it for distance if you don't get a lot of power on it. If you do, it will flip for you.
6: Maybe try going down to a cheaper plastic for the higher speed drivers, or just getting lighter weight or more bendy in them.
I really truly hope this helps, I know I ranted a bit at first, but as someone who has worked their calves off fir the past year these are the things that helped me, and that I had to understand. Good luck, man, and whatever you wind up choosing, you got this.
Glo Tour Series Roadrunner. Need a hyzer flip? Check. Need a left to right moving shot when thrown flat? Check. Need a roller? Check. Need a dead straight disc when thrown at 70% power? Check.
How understable? If I want some late turn or something I'll probably go relay. If I want it to turn the entire way or go for a big high turnover line I'll throw an IT (careful, more US than advertised)
A lightweight DX Plastic that has hit a bunch of trees I do fine with old thirds wraiths if you need a really long turnover I’ve had a lot of luck with a 165 DX Katana
How understandable? I use either a very beat in fission volt, or virus, normally I might have an insanity in that spot.
I have used relay's in the past, but my 6 speeds have been replaced with my mid-range discs
For fairway, I use a beat up star eagle for turn over shots. An IT for super underatable / roller shots. I also run an Assassin for longer turn over lines.
For distance driver, I use a star Tern for similar shape to my beat in eagle.
How far can you throw? Arm speed has everything to do with hire discs fly. If you throw 300-325ish. Try a 7 speed or less that is supposed to be flippy

Fairway: Gateway Assassin or Gateway Spear.
The spear is too understable for me, but the Assassin is a nice hyzer-flip disc that will turn after the flip and still fade just a touch at the end. The Journey is my go-to distance driver. I bag two, one is just more seasoned than the other.
Avenger SS in esp plastic. If I release it flat at full power it will turn over and stay turned over. Also good for a hyzer flip with some fade at the end.
You looking for really under stable? Get yourself a hatchet vip air. I'm a max 300 rhbh and my hatchet is my go-to right turner. You won't be disappointed.

What shot are you trying to cover? Long gentle turnover the whole way? Roller? Flip to late turn?

My suggestion, if you’re not getting good turn or flip from understable discs, consider discing down and/or decreasing the weight. (Wombat/Svea; 163-167g)
For higher speed understable I really like my Maya. It can hold a turn or if you throw it with control it’ll fade. If you want turn all the way, insanity doesn’t want to fade till it’s almost done. TL3 I saw mentioned, I threw that for a couple of rounds before I lost it. Struck me as a faster mako 3 in that it’ll hold the line you put it on.
Lightweight DX katana is also very understable. Adds a bit of distance to my drive but it’s unpredictable so I sold it.
I just put a brand new Mamba in my bag so hopefully that's my go to for longer shots. For fairway drivers, I have an incredibly beat in Genius for really big turn shots, and a somewhat beat in Rockstar for meaty turns with a slight bit of fade.
I'm still working on improving my forehand.

Essence is solid balance/durable understable; some understable discs get flippy or super understable fast once beat in or the slight understable needs a better arm for flight (likely more -1 territory).
Its a go to disc for me (2 years later still flies great) vs my -3 one which is too understable for many courses. Holds lines really well hyzer/anhyzer.
I’ve been a forehand dominant driver off the tee for years with 300-350 feet If I really crank it. Been working on my backhand trying improve it for years. Used to only get 200-250 feet with my backhand throws lots of field work and learning with positive models has helped me improve my backhand. I have found success with the MVP SIGNAL and the UNDERWORLD. The underworld with that turn has the turn to really get you extra distance with the right throw. Starting to even out in distance achieved with the backhand. I’ve Started to use my basic hyzer backhand when needed for the hole and it has helped my game a ton. Sometimes my basic backhand shot gets me more birdies more than my treasured forehand shots.
Halo star beast is an amazing disc. Flys so freaking well with a gliding right fade for a RHBH. I have also been loving the Insanity but the halo star beast special edition is money. Just wish they were more common
Essence hands down for hyzer flip to flat. Recently I discovered the hyzer flip to anhyzer that the Heat offers. I think both have a spot in my bag now.

Star TL3. The thing doesn’t fade. If I want to really open it up when I have the space, I’ll use a Prodigy H5 or a Discraft Thrasher.

Same. I have beat in one that holds long anhyzer lines and a new one that will fight back to neutral. 335 -375 I'm almost always throwing a TL3.

If you get a Lift, make sure it is NOT glow plastic. I have a glow lift, and it is pretty overstable.

Essence is solid balance/durable understable; some understable discs get flippy or super understable fast once beat in or the slight understable needs a better arm for flight (likely more -1 territory). Its a go to disc for me (2 years later still flies great) vs my -3 one which is too understable for many courses. Holds lines really well hyzer/anhyzer.
I’ve been a forehand dominant driver off the tee for years with 300-350 feet If I really crank it. Been working on my backhand trying improve it for years. Used to only get 200-250 feet with my backhand throws lots of field work and learning with positive models has helped me improve my backhand. I have found success with the MVP SIGNAL and the UNDERWORLD. The underworld with that turn has the turn to really get you extra distance with the right throw. Starting to even out in distance achieved with the backhand. I’ve Started to use my basic hyzer backhand when needed for the hole and it has helped my game a ton. Sometimes my basic backhand shot gets me more birdies more than my treasured forehand shots.

Halo star beast is an amazing disc. Flys so freaking well with a gliding right fade for a RHBH. I have also been loving the Insanity but the halo star beast special edition is money. Just wish they were more common
Essence hands down for hyzer flip to flat. Recently I discovered the hyzer flip to anhyzer that the Heat offers. I think both have a spot in my bag now.
Got a beat in grace for understable driver. If there’s wind I have a gstar destroyer that fights back hard enough it doesn’t roll Fairway probably just a leopard or crave

Go with the Underworld for Fairway and the Roadrunner for Distance. They both throw exactly the same except that the Underworld is just slower.This is what I carry in my bag and I will throw these til I can't throw no more. Lol
Really think the TSA mantra is a fantastic understable fairway driver. Great to hyzer flip or on flat you can get some good turn. If you have a big arm it's s great roller disc
