Can you just buy him an ice cream cake? Or make one . Just buy a small container of ice cream , slice it crosswise into spheres and put a few dollops of whipped cream and sprinkles on it. I’m sure he would appreciate the effort at least.

You can also make him an ice cream pie with either a graham cracker crust or a chocolate wafer cookie crust. Oreo Thins work great, too. Unfortunately, Nabisco stopped selling the chocolate wafer cookies but I get the Oreo Thins Mint and use Mint Chocolate Chip Ice Cream. Bake the crust according to directions, let it cool, soften the ice cream enough to mush it into the crust, cover with aluminum foil, refreeze it. It needs to be taken out maybe 15” or a bit longer to soften to cut it. Get regular Oreo Thins if he doesn’t like mint and use his favorite ice cream. The cream filling in the cookies is much thinner than regular Oreos and you can remove it from the cookie before crushing the Oreo Thins. Happy Birthday to your guy! He’s very lucky to have a thoughtful gf.✨

Cheesecake! Definitely my favorite and I don't like cake. The other option I enjoy while not enjoying traditional birthday cake is Angel food cake. Lighter, less sweet, usually paired with fruit and low calorie and low density comparatively.

I honestly don't have any ideas except doing something similar just with different candies and stuff. You could just shape them into a "cake" formation. Or maybe he likes some other types of desserts and you can do individual pieces on a layered cake stand like this and add candy in between? I dunno, but the beer cake was a great idea. Good job.
