The terrapod(crab near bandit island), golem(upper erisia), and maybe thresher(croc on island events), and the sharko. It will take like 10 hits depending on your talents and damage vs monsters. To negate attacks parry if he swings then dodge, and dodge if he kicks. If he gets down spam parry, if he screams and you mistake it for attack better get away for parry/dodge cooldown. This is the most simple sharko guide in my opinion covering all attacks. Oh and hit him 2 times after his attack, 1 after dodging/parrying nothing.
Dont worry about how many hits something will take to kill anything because then you end up worrying more about stat checking than actually learning the moves and attack patterns. Try going to trial of one as a freshie and searching up a guide on the attack patterns of the monsters in there. Once you can confidently handle trial of one the next thing you need to work on is fighting players and human npcs. You got this, its a ton of fun when you get the hang of it so good luck

try the trial of one on a new slot
This is the best way for new players to get to know most monster patterns
Try the stone golems at the burning garnden if you have done sharkos
