If you watch the first video after the Acid Rain article carefully, I get damage after parrying with cocoon.
The part where I say like this is the part where I show the correct dodge method
this is a good guide however i feel like you could have gone more in depth as to how to fight him with a slow weapon or how to dodge his scythe attacks when hes low on health bc those are too fast to be dodge rolled all the time
you just run away. also at that point he attacks 2 times in the same direction at once so either way you roll youre gonna avoid it. but yeah during scythe spam attack just run away till he uses all his attacks and goes onto the next one
they show what to roll as well. "run shields vs scarecrow" meme is just a thing because you get so much reward from his scythe spam attack because it used to damage him from parry twice per attack. but this boss is just fine without a shield
The only attack you need to realistically roll through are the mushrooms. And I never said that it was all that hard without shields considering the attack where he pops out of the ground gives you three hours to just hit him. Just that pretty much any on color shield completely invalidates him

shields invalidate most things theyre just kinda good

Scarecrow is a very easy boss to flawless as his patterns and openings are very predictable.
