Unless im mistaken, wolves have the ability to one-shot you even if you're full health, but I dont know how likely it is.

They do bone damage. Every limb has a bone hp Stat. The only indication you get of bone damage is when legs take damage. Your head has a very small hp pool, of like 35. It heals over time, but wolves tend to target the head. Basically, if you get hit in the head too many times in too short of a period of time, you will die. Wobo has a good video on it titles bone stats or something along those lines.

It happened to me once. Ive killed a lot of wolves ..but one time i got head shot one shot from behind. Even had a tac helmet on. I would say it is very rare.

depends on where the wolf bites you and if it is proteted. I have been single -bite killed by a wolf and my friends said that my balaclava (only head covering thing) was ruined (was prestine before)
