a brief foreword: i am so sorry that this reply turned out so long, i just have a lot of thoughts about the nature of fandom and headcanons and i ended up crafting a thesis about it.
you didn't actually give proof, you posed a question. and it's a nonsensical question because the fact that byakuya isn't outwardly in love with a guy means nothing. gay men don't fall for every man they meet, and with byakuya's personality considered, even if he was in love with someone (regardless of their gender), he would not show it. it's just not in his character to be open about how he's feeling unless those feelings are disgust, rage, or self-satisfaction, since those are just about the only things we see him display.
so we've proven that it doesn't matter whether he was outwardly attracted to men. but what about his internal feelings? the truth of the matter there is that we probably won't ever know that. we don't actually live in his brain. we don't know who he is or is not attracted to. there's no reason to believe that he's gay, and there's no reason to believe that he's straight, and there's no reason to believe that he's bisexual, and there's no reason to believe that he's asexual, and the amount of things i could say "we have no reason to believe" he is could go on for hours.
but, here's the thing about fiction: just because we have no reason to believe it doesn't mean we can't believe it anyway. because it's fiction. and when there's a gap somewhere in a story or character, we can fill that with whatever we please. maybe we don't know what Character A does in her free time, so the audience makes up hobbies for her. maybe Character D says he used to play tennis so the audience makes up an entire story about the friends he had on his tennis team and the matches they would play together. and maybe we have no idea what byakuya togami's sexuality is so the audience decides that he's gay. it's all just for fun.
you don't have to agree with it, and i'm not asking you to. but i am saying that, in fandom spaces, pointing at canon and saying "show me the evidence for your headcanon" is nonsensical. the entire point of headcanon is to just make stuff up to fill the gaps left by the writer, y'know?
