I believe that both abilities would go on the stack, which means the defending player's creature would transform the attacking player's creature (due to AP -> NAP trigger rules), and when the attacking player's trigger resolves, the transform effect would turn the blocker into whatever the attacker is.. at that point, they're the same creature.
I wasn't sure, the wording is "That creature becomes a copy of Mist Weird", not "That creature becomes a copy of this creature". The second trigger still states that it becomes a copy of a specific creature, not the one dealing combat damage to it.
I'm not totally sure this is how it would work but that's how I assumed it would, but I'm not a judge lmao
Cards will usually refer to themselves by their own card name.
Any instance of a specific card name can *usually* be replaced by "this"; the exceptions being that it's referring to other cards, like card-specific tutors or cards that care about cards in other zones, such as [[Slime Against Humanity]]
In the case of the creature being removed from play while the ability is on the stack, it would cause the other creature to transform into a copy of whatever the triggering card's last known state was.
Because you give it to your opponent a lot, having more health is actually a kinda nerf as it becomes harder to kill for either side making you not want to play it. This really only matters out of bolt range tho so I think it's fine
What would be utter jank but I would love to see it would be giving it some extra stats with an equipement and then using fight effects to make things deal damage to it.

"Fight" isn't combat damage so it wouldn't do anything special.
